 Tasted by sthugo on 12/2/2023: St Hugo Coonawarra Cabernet Vertical spanning 3 Decades (Merce's Castle): Our first screw capped bottle and it showed. This was very closed even after a 2 hour decant. Muted nose not giving much away. First sip showed plenty of white pepper, mint and spice. Up to now probably the most different St Hugo in the line-up. Big and dense with a medium finish. Maybe would show better with food? For me this was my least favourite vintage in the flight. (353 views)
 Tasted by rednick@internode.on.net on 11/3/2020: Excellent example of Coonawarra Cab, 1 hour decant - nose cigar box, eucalypt & touch of fruit - lovely powdery tannins, followed by a fading but firm line of acid and then wrapped with blackjack fruit with touches of oak around it - really very good and to my mind no rush (1549 views)

 Tasted by nwebstar on 10/10/2020: I think past its best. Suspicious first taste - some promise but with a certain faded cardboard edge. Next hour and 24 hours got worse proving its past it. Disappointing for a well cellared Stelvin capped wine. (1602 views)

 Tasted by HughK on 4/15/2017 & rated 90 points: Drank over two days and displayed the halmarks of a St Hugo Cabernet to the end. The wine did not open out as much as expected the second day and along with the slightly fiery finish in the mouth I am not sure it will improve much past here. It's a nice if not overly refined wine now so enjoy it. (4537 views)

Long finish of chocolate orange and apricot pip 60-90 seconds. No sediment present, so I'm guessing this will not improve. (3798 views)

 Tasted by Argrath on 10/6/2014 & rated 87 points: Full, parody-fruity, forward nose with loads of mint and menthol. Cassis and toasty vanilla-oak. Tight and Mighty, but no layers. Young. Will be better with secondary aroma development.
Medium-fullish, concentrated, very fruity palate. Nice acid. Dynamic tannins. Very succulent. Fiery, oaky finish. Unbalanced and with too much mint for my taste.

 Tasted by Capt Cutlass on 11/16/2012 & rated 88 points: Blind tasted. Deep purple and there was smoke... Intense nose of eucalyptus, menthol, dark cherries & plums, and cedar. Again eucalyptus on the palate, dark stone fruits, coffee, cocoa and above all bitingly strong alcohol. This needs more time and should have been decanted. Tasted much better on the second day without a vacuum pump since the alcohol better integrated. At first gave it 86 but moved up on the second day. Could be interesting in another 5-10 years.  Tasted by graemeg on 12/20/2011: {screwcap} Big, youthful nose of vanilla/coconut and bracken/cassis cabernet aromas. Rich ripe palate, not overdone; rather monolithic at this age; medium weight and length of finish; will take some time to develop much interest beyond typical young cab flavours. Seems one-dimensionally oaky right now; could settle down with time. (4707 views)

The palate is controlled with defined blackberry and blackcurrant, there are commanding ripe tannins that provide excellent structure and are well integrated with both fruit and oak.

The finish shows focused dark berry goodness, with the 07 an excellent wine from a tough year.

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon
