 Tasted by acyso on 12/31/2020 & rated 88 points: Served double blind. Immediately upon smelling and tasting this, I went to sauvignon blanc -- it had that distinct of a green note (and reading some of my notes from five years ago, something that I didn't pick up on back then). Sure, it was rounder than a typical example, and admittedly playing the player a little bit, I guessed that this was a St. Bris! The fruit is incredibly fresh here, and I would never have pegged it for being so old. However, the green note actually seems to grow slightly more prominent with air and that really detracts from the enjoyment of an otherwise primordially fresh bottle of chablis. (2493 views)

Crystal clear pale yellow. Driven from the start by yellow orchard fruit and even a touch of pineapple. There's a green herbal note throughout - mint and eucalyptus. With 6+ hours of air, picks up more typical Chablisienne qualities with iodine, crushed shells. The palate carries a lot of the orchard fruit and eucalyptus, but also gains some crimini mushroom and iodine with significant air. Medium plus acid, this is quite fruit driven, with that distracting green tinge throughout. A pristinely kept bottle, but no where near as interesting as an '04 MdT this time last year. This bottle simply reinforces my apathy toward Vaillons as a whole - the first mediocre '04 Chablis I've come across in well over 2 years. (1756 views)

 Tasted by ttholst on 4/19/2019 & rated 94 points: Luftet en time i karaffel. Elegant duft og svak med tydelige Raveneau-toner. Lukt av frisk sitrus, sjøsprøyt, gule epler og snev av østers. Smaken var mindre moden enn forventet, mild sitronkaramell, mer honningmelon enn honning, svak nøttearoma og kaldt sjøvann. En velbalansert vin med avdampet fruktighet, middels syre og lang smak. Jeg synes denne vinmarken er en av de mest elegante i Chablis. Fungerte strålende til pannestekt sjøkrepshale med fennikel-salat, smaksatt med syltet estragon og lime. (2116 views)

Smak av sitrus, akasiehonning, grapefrukt og salt sjøvann. Veldig elegant vin med veldig lang ettersmak. Drukket over 2 timer og som alltid var det siste glasset best. (2207 views)

In a great place right now, but not showing any signs of aging. Vibrant acid, pure, and crisp with overtones of the Raveneau lanolin that come out with air. (2029 views)
 Tasted by drwine2001 on 12/13/2015: Annual End of Year Mostly Magnum Funday (Dig Wines, San Francisco): Light yellow, pristine appearance for this age. Amazing essential Chablis nose of crushed oyster shell, white flowers, and citrus. Light weight and absolutely delicate for a Raveneau. Taut, crisp, great acidity, moderate finish. This is all 2004 and much less of the Raveneau beeswax and hazelnut, although maybe that will come with more age. Beautiful and quite young. (2442 views)
 Tasted by acyso on 10/5/2015 & rated 90 points: Senn-d off (part 2): Chablis at Nico Osteria (Chicago, IL): I didn't even realize I had tasted this bottle a few months ago, and to be honest, this wasn't like my previous note at all. Again, given the vintage, I found this to be more fruit-forward than I would have expected. There's a slight bit of salted caramel or something like that on the palate, that adds richness to the wine, though it was a little bit weird. I loved the acidity here. (3068 views)

The palate has acidity that is even more powerful than usual. Lots of salt water and lemon juice, but that belies an amazing palate density. Rich unctuous texture. Ripe orchard fruit aromas that even had riper tropical hints. Leaner flavor profile that was very chalky with a more acid-driven finish than I'd prefer. (2762 views)

Reticent at first, but when aerated and warmed an array of elements there -- spicy hazelnut meets petrol notes. A bit "sharper" in tone and flavor with more candied lemon rind vs. candied lemon pith.  Tasted by Burgundy Al on 7/30/2012 & rated 93 points: Chablis 2004 Shootout...Raveneau, Dauvissat and Fevre...Top Vineyards (L2O - Chicago IL): Tasted single blind alongside Dauvissat and Fevre 2004 Vaillons. Clearly the superstar of this flight with incredible concentration on both nose and palate. Apple and lemon peel start-to-finish with huge density, giving it a slightly backward character. Great acidity, limestone and oyster shell really stand out on long finish. Much more integrated and balanced than I remember from when tried shortly after release. I'd expect this to continue to improve with more time in the cellar. One final glass was remaining for the 2nd day and was still great, just a little softer and less intense. (4549 views)
 Tasted by abh on 6/17/2012: Drinking some old bottles...: This wonderful mix of almost water-like purity and profound concentration. Salted lemon peel and mineral as you'd expect, but you have the feeling flavour components aren't quite what this is about. Very youthful and somewhat reserved, though. Sort of meta-Chablis, a commentary on the genre. Like most of the afternoon's wine, more for contemplation than obvious, easy, pleasure. (3860 views)

Les vins de Bourgogne (Bureau interprofessionnel des vins de Bourgogne) (and in English)

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

2014 Vintage Notes:
"... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman

2018 Vintage Notes:
"There’s not that razor sharp Chablis acidity in 2018,” says Patrick Piuze. “But there is good definition of place. The dry conditions drove vines to drink deeper down in the soil profile."
