It’s definitely well past it’s prime - but you can pick up echoes of what it was. Still some red fruit, black cherry and wood notes along with lots of oxidative aromas of olive abd forest floor. But alas the structure is gone and the fruit is well faded. The mouthfeel is silky smooth, but this is well past it’s time. What a difference.
Wonderful nose of cherries, mint and dried flowers. Rich and elegant. Smooth tannins that cares the mouth, with just the right amount of acidity to ready your mouth for another sip. It shows some signs of fading as the evening goes on; after a few hours, it starts to lose focus and verve but for the first few hours, it is all there. Nice wine. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners.
