Opened two bottles at a dinner party and this wine was a huge hit and both bottles were very consistent. They both have been in long term storage at 57 degrees, so perhaps that made a difference. Decanted about 15 minutes before serving. Slight bricking on the edge, but wine still has vibrant red fruit with hint of mocha on the finish that lingers for 45 seconds or more. This drank a little differently than the previous bottle which i think was due to it not being decanted. Currant, fig and creosote on the nose with a little smoke also. Full bodied with very nice fruit intensity on the palate. Quite extracted in style with black cherry and ripe plum fruit and some smoked meat flavors. Medium length finish with some grippy tannins and notes of black pepper and spice. On day 2 this became more feminine in style and drank much more in line with my previous TN. Medium bodied with blueberry and red cherry fruit profile qnd some green vegetables. Feminine in nature with really good balance and nice acidity. The fruit intensity seems to develop further through the mid palate and the medium plus finish. Tannins are resolved making this wine one to enjoy now and in the near future. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.
Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet SauvignonUSAAmerican wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine.
