Community Tasting History

Community Tasting Notes (average 91.3 pts. and median of 91 pts. in 10 notes) - hiding notes with no text

Tasted by wicozani on 1/1/2023 & rated 90 points: Quickly double decanted for sediment. A near opaque in the glass, the nose features ripe plum, cassis, tar, and leather. This is certainly still alive. Hints of dried fruits on the palate, including raisin and prune, with iron, citrus, and a suggestion of tomato leaf. Certainly past peak with tertiary notes, but this was certainly drinkable and paired with the slow-cooked rib roast quite well. (197 views)
Tasted by wicozani on 3/3/2019 & rated 90 points: The cork, nearly soaked through, came out in multiple pieces. Poured through a strainer as a result. A dark ruby-garnet in the glass, with unexpectedly excellent color out to the thinning edges; no signs of bricking. Mature nose, featuring ripe red plum, red alpine currant, mahogany and orange peel. Medium-bodied on the palate, slightly oxidized, with no remaining tannins. However, still very much alive at 25 years of age. Have one more and will open when would like to expose others to an aged, mature Napa/Sonoma cabernet sauvignon. (400 views)
Tasted by Thirsty1 on 3/8/2015: This bottle of wine is old enough to drink a bottle of wine. At 21 years old I had no expectation it would be as good as it is. Very bordeaux-like with less intensity and stinkiness. Mostly secondary - earthy, leathery, tobacco, dried cranberry. Dark purple, very little bricking on the rim. It's youthful but is past it's prime and on the way down. Cork was in great shape. The average price paid is $35 for this, and it's a steal. (1283 views)
Tasted by Tannic Monster on 12/31/2014 & rated 93 points: Oh yeah...you know you're in for a treat the moment your nose gets wind of the glass. In the glass: beautiful dark purple with no bricking on the edge...this baby has a few years left but is at peak now. On the nose: a symphony of pleasures, cherries and dark berries, cream, fresh leather, moist tobacco, and pomegranate. On the palate: Silky leather and blackberry cream and inky cassis. A nice long finish with a hint of sweet red bell pepper...not off putting like some green bell pepper can be. All in all a world-class wine. I would happily pay 2-3 times what I paid for this wonderful wine. (1314 views)
Tasted by magic2coop on 12/2/2014 & rated 95 points: This is an epic rendition of 1994 Cab. Not old at all. Amazing depth and layers with a long finish. Enjoy now. (1383 views)
Tasted by PSirah Tampa on 11/26/2012 & rated 94 points: Drinking like a mature left bank Bordeaux- beautiful. I would never guess this came from California in a blind tasting. Plenty of life left. (2193 views)
Tasted by wine maestro on 9/15/2012 & rated 89 points: Suave crimson hue with wonderful scents of cigar box, this wine has maintained a lot of alluring character and
personality. Smoky red berries intertwined with tobacco leaf and a compelling herbal tint. Delicate flavors and
textures, with fine balance and acidity. Glides towards a mocha laced, drying, but lasting finish. Picked up the
pace the second evening developing notes of cinnamon, and cherries, dotted with dark chocolate. A third and
final night brought a racy, earthy edge. Hoped to score this higher, but could not find extra dimension or depth
to do so. Drink up. 94 California Cabernet Sauvignon horizontal. (1668 views)
Tasted by jts_brown on 8/7/2009 & rated 91 points: Entering this note a month after drinking it. It had plenty of life in it and we liked it. Just can't remember specifics now. (1532 views)
Tasted by mdefreitas on 5/30/1999 & rated 89 points: Muted nose. Plums, cassis... a bit of ashtray detracted. Drinking well right now. (1594 views)

Souverain

Producer website
As described on the history page, this winery has variously been referred to as Souverain, Souverain of Rutherford and Chateau Souverain. They are ALL the same winery making the same wines, so on CellarTracker we have standardized on just Souverain.

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

USA

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.

2021 vintage: "Unlike almost all other areas of the state, the Russian River Valley had higher than normal crops in 2021, which has made for a wine of greater generosity and fruit forwardness than some of its stablemates." - Morgan Twain-Peterson
