 Tasted by chablis28 on 10/19/2023: Jim and Michelene for their 40th wedding anniversary w/ chef Don Saunders. Nita's & my btl. I opened this 2hrs before dinner just to check it and found it amazing. Light gold, stunning orange zest & mineral. I put the cork back in after 10 minutes and felt great about this '07 Clos as always. 5hrs later at Jim & Michelene's I removed the cork once again, took a pour & passed. Sadly, this was still very nice but it had picked up some butterscotch and lost a bit of its vibrant freshness. Completely drinkable but not the 98-100pt test sip earlier in the day. This had slipped to a 92/93 wiine and I couldn't adjust to the loss of its best self just 5hrs earlier. The previous btl on Aug 2021 was a near perfect 99pt wine. No more 07s left and none to worry about going fwd. Purchased on release and stored in my temp-controlled cellar since. (990 views)

There is youthful power and verve and an incredible depth and seamlessness of vibrant fruit layered with minerality, pastry cream, roasted hazelnuts and an ocean spray-like salinity. It’s texturally captivating, wrapping around the palate with killer density without weight. Racy acids balance its richness and secondary nuttiness and it finishes forever. White burg at its finest.  Tasted by cct on 5/26/2023 & rated 96 points: Pop and pour. Drunk over several hours. maturing golden color. Chalk, marzipan, and orchard more than citrus fruit on the nose. The most mature of my bottles to date. It's toothsome and intense yet only mid plus weighted with plenty of dry extract delivered with a clarity and focus like drinking mineral water. Intensity and depth without heaviness on the palate with more of the same fruit, chalk, and a sense nuttiness on the back end. Finishes mouthwateringly clean and fresh. Complicated and contemplative. Very long. This is drinking very well, but I hope it is a bit more advanced than my remaining bottles. I will try another one soon and see. (1012 views)

 Tasted by rlove on 2/4/2022 & rated 94 points: Dauvissat's 2007 Clos needed some air to come around, initially a bit backward with a hint of funk, but with time was an excellent Chablis sporting a beautiful nose of lemon curd, beeswax, and actual oyster. The palate is bright and savory with plenty of saline minerality and both depth and breadth to the persistent flavors of citrus and stone. This is elegant and even understated but absolutely delicious. Should continue to drink well for awhile. (2093 views)

A steely, soil driven nose with chalk, oyster shell, lemon pith and curd, nuts, and subtle white florals. On the palate, this has terrific density and dry extract, yet comes across without any heaviness. Iron fist in a velvet glove Chablis style. Chalky and deep, with mouthwatering freshness on the palate, with more of the same citrus notes, and nuttiness that adds complexity. Archetypal Chablis drinking at peak with plenty of time in hand. Chiseled, yet it still has a waxiness to the texture that adds breadth and complexity. Power and grace. Like drinking mineral water. Hedonists run away. For me, this is wonderful (2006 views)

Les Clos is totally in the zone showing incredible power and striking intensity flaunting its signature crushed oyster shell minerality and sea spray salinity with yellow fruit and intriguing flavors of beeswax and lavender honey. The palate shows superb integration and excellent weight and midpalate depth, with such a regal texture and mouthfeel. Its focused finish just goes on and on. A stunning Les Clos that has a long life ahead ✨ (1757 views)
 Tasted by drwine2001 on 1/4/2022: Decanted for an hour before pouring. Medium yellow. Aromatically, early on all lemon, and then an explosion of ocean broth, iodine, and even anise. Bracing at first, but then rounder, middle weight, complex, savory flavors with tremendous focus, intensity, and driving chalk/limestone finish. Chablis the way it was meant to be. After so many recent disappointments with Dauvissat, this one almost made me cry when I realized once again how great they can be when they are in good form. A bottle like this could be profound on its 20th birthday. (2113 views)

It seemed more minerally than fruity and with some oily viscosity. I appreciate that it is a real treat to try an aged GC Chablis from a top producer, however if I am honest, this is more a wine that I respected that enjoyed. In my estimation this needs another 5 years ++ to develop additional complexity. (1648 views)

Hard to describe, as great wines often are, it was served slightly too cool but quickly got into its stride. The nose was like a compelling green-yellow cloud, smelling entirely of itself, then on the palate nicely mature, with yellow apple, honey, lemon cream, mouthwatering but smooth acidity and an oily, sensual quality. I'd been sitting on this for a while, waiting for the right occasion, and delighted it showed so well. (1426 views)
 Tasted by dcwino on 11/18/2021 & rated 96 points: Small gathering - 08 and 88 Cristal Roses and 00 Bordeauxs (Capital Grille Tysons, DC): Perfectly mature yet youthful nose displaying ripe but pure yellow fruit, lemon curd, candied lemon peel, honeysuckle, honey, beeswax, crème caramel, sweet spices, oyster and mineral. Beautifully integrated palate, finely layered rich but pure yellow fruit, rich and oily but also good precision and freshness, perfect amount of acidity and mineral, and a seamless long sweet yellow fruit driven finish with honeysuckle and limestone at the end. This is the freshest example I have had. Although the fruit is rich, this is a classic Dauvissat. Excellent showing. (1720 views)
 Tasted by dcwino on 10/8/2021 & rated 94 points: A lost Friday afternoon gathering – how to semi cheat in a blind tasting (Black Salt, Washington DC): The color is decisively darker than the 07 Raveneaus. Beautifully mature mineral nose displaying succulent ripe yellow fruit, candied lemon peel, lemon curd, light honey, beeswax, saline, oyster shell, oyster jus and crushed rocks. Fully integrated palate, nicely layered succulent yellow fruit, bright acidity, strong crush rock mineral, and a long ripe yellow fruit driven finish with honey and oyster shell at the end. The overall expression is at least five to ten years more advanced than the 07 Raveneaus. It is drinking really well, though slight more advanced than expected. Better to drink up! (1872 views)

 Tasted by chablis28 on 8/18/2021 & rated 99 points: PnP in Riedel (red) Burg glasses tonight at venue. Instantly, a head turning wow wine! Mid gold color & not the tiniest hint of pre-mox 14yrs out. A bold mix of tide pool & citrus aromas. Flavors explode with mouth coating layers of gun flint infused minerality, lemon, apple, pear, honey and other harmonics in symphonic precision & expression. The substantial power & intensity never overwhelm the elegance & finesse. This is a civil classy wine that never leaves any doubt you're sipping Grand Cru Chablis from a master producer. I really think using the Riedel (red) Burg glasses had a very positive impact on the aromatics & flavors both. Just killer! And, I have one more that could be left alone till its 20th. This is great chardonnay by any measure. 13% alc. Thrilled to own it! (1901 views)

The palate is perfect - again piercing but with all the depth and flavor generosity you could want. A subtle, perfect performance. Not flashy, just perfect. Like playing a great Raynor. Les Clos is arguably the finest grand cru vineyard. Les Clos has greater density and power than the more elegant Vaudésir It is a deep and compact wine. The strong mineral core is of polished steel and this is enveloped in a luscious depth of fruit. If Vaudésir is the queen of the grand crus, Les Clos is the king. It ages wonderfully – a minimum of 10 years. It’s a large sunny vineyard, (28.39 hectares) facing south.It is quite rocky and has a higher level of limestone.

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

"... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman

2018 Vintage Notes:
"There’s not that razor sharp Chablis acidity in 2018,” says Patrick Piuze. “But there is good definition of place. The dry conditions drove vines to drink deeper down in the soil profile."
