Theme of the Evening: Langton's Exceptional Cabernet Dinner. Wines were served two at a time for comparison and contrast.
One of the flagship wines from the Wynns Coonawarra Estate. Only made in good years, this wine presented a lovely eucalyptus, blackcurrant, tobacco, mint and cedar. When compared to the 2006 Moss Wood Cabernet Sauvignon, this wine presents more complexity and dimensions. (470 views) | | Tasted by Andrew67 on 7/2/2022: Drinking beautifully right now. Powerful fruit - blackberry, blueberry, light mint/eucalypt and a hint of chopped tobacco. A fine line of acid. Good mouth feel with a lingering finish. The tannins are smooth. This had a three hour decant/breath (2:00pm-5:00pm) then back in the bottle and was opened and consumed over three hours (7:30pm-10:30pm). It continued to open up in the bottle/glass right up to the last drop. I expect this to cellar for another decade. 94. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.
Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace.
