 Tasted by David Paris (dbp) on 5/21/2018: After I purchased these and stuffed them away in the cellar I went to another tasting with Jean-François Bourdy where he mentioned that these barrels for Vin Jaune are monitored often for freshness and when he detects any barrel going off, he immediately bottles it and winds up with this wine, the Savagnin Côtes du Jura. So it still often sees 4-6 years under flor. But since the barrels started heading in the wrong direction he bottles this for quick consumption, he stated within the first year of release. Indeed, the bottles I let age a bit did not age well. As you see my note from 2012, on release, this wine was quite fine and enjoyable. At this stage of its development it is all oxidized and nutty and really not all that enjoyable. It's certainly interesting, but it's challenging to drink more than a few sips. Glad this was my last bottle, but I really wish I drank these years ago. (1068 views)
 Tasted by David Paris (dbp) on 11/11/2012 & rated 90 points: Jurafest 2012, Day 3 (E&R Wine Shop, Portland OR): Jean-François Bourdy mentioned that this is wine he makes from the barrels that aren't going to be good enough to put into his Chateau-Chalon. With less aging, this is still a great wine in its own right, offering very soft and quiet aromas, with only mild tartness. The palate gets more interesting, with a very coating richness and soft as velvet texture and mild acids. Still pretty round and quiet; very soft. The finish is tart and quite puckering. Very deep intensity here, with really great intensity of flavors. So tightly packed, but showing more than the '07 Cotes du Jura (Chardonnay). (2514 views)

Jura

A petite and relatively obscure wine region in eastern France, between Burgundy and the Swiss border. Its geographical isolation has helped it to remain a rare bastion of traditional winemaking techniques, and today it produces some of the most distinctive wines in the world. Reds from the Jura are often light-bodied, earthy, berried, and reminiscent of the village wines of Burgundy (though here they are made of local grapes like Poulsard and Trousseau). While Chardonnay features widely, the true specialty of the region is the Vin Jaune (“yellow wine”) made from the white Savagnin grape. Cloudy, difficult Vin Jaune is made only in the best vintages, and must be aged for at least six years before being released. As it ages under a layer of yeast, known locally as “voile,” the wine slowly oxidizes, leading to complex aromas and flavors that range from walnut skin to sultana to spices and truffles. Famously long lived it is always sold in dumpy 62 cl bottle - the wine lost in production having been taken by les anges.
