Opulent in style - rich, unctuous without being over the top. Pairs well with conserved Portuguese or Iberian fish filets. Drink up or wait a few more years if you want to see how it evolves further. Oily, developed, savoury, secondary notes of straw and hay, lovely concentration, juicy balance. Bone dry, yet buttery with elegant lemon concentration, pithy bitters, and preserved salted lemons. Long mineral finish, silky almost, wet limestone. Excellent drinking now, pairing easily with ayam gulai, ngorhiong, salted egg yolk prawns, etc. Pity my final bottle!
