Bu avec mon superbe Poulet à la portugaise, un accord magique, plus convainquant que ce que j'avais dégusté en succ! Beaucoup de substance et de complexité ici. C`est vif et bien frais, sur des notes de fruits rouges, de la pomme grenade et des fraises avec un peu de silex et d`herbes. Une belle acidité rafraîchissante et une finale bien longue et suave qui nous laisse sur une minéralité profonde. EXCELLENT, définitivement un cas de caisse. De plus, ce rosé est dans une bouteille de verre teintée pour le protéger et améliorer sa conservation...c`est tellement bon qu`il n`aurait pas besoin de ça dans mon cas!
Info additionnelles: Le Domaine Thymiopoulos se trouve au sud de Naoussa, dont le vignoble se situe dans le Nord de la Grèce à une altitude de 100 à 400 mètres. Les vignes sont essentiellement plantées sur les coteaux. Le seul cépage autochtone planté dans la région de Naoussa est le Xinomavro qui signifie xino=acide et mavro=noir. On retrouve dans le vignoble aujourd’hui de nombreux autres cépages européens comme le Merlot, la Syrah et le Cabernet Sauvignon mais ils produisent souvent des vins standardisés. Avec le Xinomavro seul le terroir parle en fonction de la géologie. Celui qui est en charge de ce beau domaine, Apostolos Thymiopoulos est talentueux et possède parmi les plus belles vignes de Naoussa. La famille Thymiopolos fait du vin depuis des générations, mais les raisins étaient vendus à la cave coopérative et à la maison Boutari. Le jeune Apostolos, une fois son diplôme d’œnologie en main, est revenu au domaine pour brasser un peu les choses ! En travaillant avec sa famille, Apostolos a commencé par implanter les principes biodynamiques. Puis tranquillement, il a dirigé le domaine vers une approche plus naturelle à la cave.
Les plus vieilles vignes du Domaine ont 130 ans et les nouvelles vignes sont plantées à une densité de 7000 à 12000 pieds par hectare pour accentuer la concurrence racinaire. La fraîcheur des montagnes surplombantes permet d’allonger la durée de maturation. Put your nostrils in deep and you'll get that heady, truffly rosewater Xin scent that is so alluring - like a subtler version of Nebbiolo or a Pinot at its most violet-y. But it's also a rosé at heart - vivid, nervy, intensely refreshing, lip-smackingly acidic. The colour is so deep salmon pink it's almost orange (but it is NOT an orange wine! ugh!) It has body, depth, power, on the one hand, and energy, lightness and oodles of romance and heady flowery fragrance on the other. Super! I've been introduced to Thymioloupos wines by The Wine Society community and absolutely love having discovered the Xinomavro grape. Described as the 'Bastard off-spring of pinot noir and cinsault' it seems to have the ability to age and develop like a decent Burgundy (but without the price tag). The Rose is a complex proper wine and if you can find a bottle please try it. It reminds me of Sylvain Pataille's age-worthy Rose from Marsannay. You will not be disappointed!
