 Tasted by Joealex on 9/19/2018 & rated 91 points: After almost 17 years it is fully mature outstanding wine which delivers lots of pleasure. All components are perfectly integrated, tannins are still present, full body, acidity is low but wine is not flat, sweet aftertaste with hint of brown sugar which distinguish this Paso Roble Cab from Napa Cabs. Worth to note that this is regular Cab from Justin which was not intended for long aging but quick consumption within 5 years but neverless it holds strong even after 17 years!! I think great 2001 vintage in California helped a lot which delivered tannic yet balanced wines for aging even for regular wines but made by smart producers like Justin. This bottle was kept in perfect conditions since the beginning. Anyway I am really impressed by the quality of this fully matured wine which costs in Europe 25 Euro by now. Fantastic surprise. Ripe plum, dark berries, olive (I usually find olives on the nose and palate of Justin Cabs), cured meats and a little mocha on the nose. Nice balance and the tannins have softened considerably with time. I drank four or five of these young and this is the best the wine has shown in terms of layers and complexity. Ripe plums, baking spices, black cherry and graham cracker on the palate. A very enjoyable wine. (5570 views)

The tannins have laid down leaving a smooth yet medium to full bodied texture. It had a little dirt and vegital component on the finish which made it a little more interestesting. Bit of fennel and red fruit on the mid-palate before some soft tannins hit. This has been a reliable Cab over the past few years. Not outstanding, but solid for $20. The wine is rich and full of fruit and at the same time balanced. I bought a case so that I can enjoy it now but hold back a few bottles to see how it develops over time. (5869 views)

 Tasted by La Cave d'Argent on 9/25/2003 & rated 88 points: This wine was aged in 22% new oak (82% American, 10% French and 8% Hungarian). Consumed at home with grilled filet mignon. Bright disc. Deep purple/ruby robe with red rim. Clean nose, showing moderately intense aromas of black plum, kirsch, raspberry, cedar and oak. Medium-bodied on the palate, with medium sweet tannins, medium acidity and a supple mouth texture. Similar flavors as for the nose. Medium, smooth finigh. Very drinkable now, this wine should prove to be quite enjoyable for at least the next 4-5 years. Good value. (1316 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
