 Tasted by Lype on 4/8/2023: After one hour upon opening the bottle this felt one dimensional and past peak, not interesting to say the least. Left to its devices and sipping other wines. After five hours - what a change. Fruit fully intact, spicy and sweet cassis and licorice flavors. A Cabernet Sauvignon which is sweet, round, smooth and classy. Good long finish. I did not see this coming, ended up sourcing more. (444 views)
 Tasted by tplskylrk on 8/5/2021: 3L. Daughters graduation in Woodlands Hills, Mexican. This was just popped opened and glasses filled. Really mature and all the tertiary flavors out. A wee ibt past her prime even in this format. But got better as the night went along and the last glasses were really magical. (1383 views)

Surprising amount of fruit - not fresh, but also not dried out. Overall a very enjoyable wine - velvety with round edges, medium body, good concentration and decent structure. Soft and lush in style, if tasted blind I would have guessed it for a meritage with some merlot, or perhaps even a right-bank bordeaux. A bit straightforward, but no flaws. (3596 views)
 Tasted by Outplaying on 3/14/2014: Tasted blind. Lots of bell pepper, some herb and leather, red fruits. Really good acid. Guessed an old world cab franc from Chinon. Was really surprised this was from California. 13.5%, great acid, red fruits. Ahh the good ole days in CA. Ok - some green/herbaceous notes but I liked this wine. (4638 views)

Pop and pour and the cherry / black cherry nose is still very prevalent. Cherry on the palate and very smooth with the tannins virtually gone. Stand this one up a few days before and use a strainer as it is loaded with sediment. Not hot at all with only 13% alcohol. If you have any left we suggest drink up. (3455 views)

for what, a $20 wine? this is pretty damn good. nice mouthfeel and balance, combined with classic cassis and sweet tannin. not decanted, and it opened in the glass nicely; mild sediment in the bottle, so it could have been decanted. i'm a big fan of the meritage, and wild about the dollarhide ranch from this vintage. st supery really hit the target in 1997.

Medium finish. Very good experience. Recommend drinking now-should have at least 2-3 more years left but hard to pass on now. Why wait? (3568 views)

This paired fantastically well with a nice filet. Very smooth tannins and overall a very nice bottle. Unfortunately this was my last bottle, probably the best of the 6 or 7 that I had. It was so good, I can't imagine it betting better. However, it didn't at all fall apart in the glass or decanter so I may be wrong. Can't go wrong drinking it now. (4098 views)

It doesn't fall apart in the glass or the next night, but it is very open and drinkable. I wouldn't cellar these long term and will consume most of mine in the next two years. (4369 views)

However, I didn't have a chance to decant it for as long and the wine got better and better the longer it was decanted last time. Very nice complex nose with strong berry scents. The initial flavors were berry as well with a longer dry finish of anice or black licorice. Definitely has more legs in it. (4073 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
