Red fruits, cherries, spice. Medium bodied with good acidity and good length. The tannins are still quite firm, this will likely last for a few more years. Still some black fruits, with Clare Valley eucalypt and licorice. Plenty of fine tannin, palate is beautifully balanced. Who said the Clare Valley doesn't do good cabernet? Palate shows tight acidity and tannins, with bright fruit (blackberry, raspberry) and and lots of smoke and spice (pepper, cumin). Blackcurrent liqueur, some firm menthol (but not to the usual Aussie blockbuster level), a lovely all-rounder. I'm guessing it's slightly past - I had this lat year and it was firmer and more structured - now it's a little sweeter and I think and may not have that much left in it. Still a rich, deep wine that's very enjoyable now. Perhaps give it a half-hour decant. (1516 views) | | Tasted by graemeg on 8/4/2008: NobleRottersSydney - Taylors wines with Mitchell Taylor (Lucio's, Paddington): {screwcap, 14.5%, A$50} The 2004 ruby-coloured youthful wine seems riper and fleshier than 2003, with a more curranty note on the nose which nevertheless doesn’t submerge the olive-green Clare character. Somewhat oaky on the palate too, with strong chalky tannins easily buffeting the ripe currant fruit. It’s a bit of a brute now, to the point where I imagine in the end the structure will leave the fruit behind. Minimal development so far; medium length finish and more even palate says it will reach greater heights than the 2003, but still inside 10 years. (1822 views) |

It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.
Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace.
