 Tasted by Andrew67 on 2/3/2016 & rated 92 points: Really nice structured cabernet. Red fruits, cherries, spice. Medium bodied with good acidity and good length. The tannins are still quite firm, this will likely last for a few more years. (1898 views)
 Tasted by Gritty on 1/30/2016 & rated 93 points: Clare Valley goodness. Wonderful wine from a wonderful vintage. 12 years on, this is better than ever. Still some black fruits, with Clare Valley eucalypt and licorice. Plenty of fine tannin, palate is beautifully balanced. Who said the Clare Valley doesn't do good cabernet? If you like a balance between primary and secondary, drink it now. (1863 views)
 Tasted by Drinking Trees on 1/18/2015: Nose of raspberry, red cherry, blackberry, and lavender. Palate shows tight acidity and tannins, with bright fruit (blackberry, raspberry) and and lots of smoke and spice (pepper, cumin). (2032 views)
 Tasted by kleal on 12/30/2013 & rated 91 points: Deep Garnet in the glass with some lighter edges. nose of Dark fruit, peppers, Dust and some roast meats. The palate was full of dark berries and, pepper with balancing acidity. Long Finish. (2370 views)

 Tasted by richiemagnier on 12/25/2012 & rated 90 points: Good solid wine but its time may be now, or perhaps a year or two ago. Blackcurrent liqueur, some firm menthol (but not to the usual Aussie blockbuster level), a lovely all-rounder. I'm guessing it's slightly past - I had this lat year and it was firmer and more structured - now it's a little sweeter and I think and may not have that much left in it. Still a rich, deep wine that's very enjoyable now. Perhaps give it a half-hour decant. (892 views)

 Tasted by graemeg on 8/4/2008: NobleRottersSydney - Taylors wines with Mitchell Taylor (Lucio's, Paddington): {screwcap, 14.5%, A$50} The 2004 ruby-coloured youthful wine seems riper and fleshier than 2003, with a more curranty note on the nose which nevertheless doesn’t submerge the olive-green Clare character. Somewhat oaky on the palate too, with strong chalky tannins easily buffeting the ripe currant fruit. It’s a bit of a brute now, to the point where I imagine in the end the structure will leave the fruit behind. Minimal development so far; medium length finish and more even palate says it will reach greater heights than the 2003, but still inside 10 years. (1822 views)

Note that this winery is known as Taylors in Australia, but as Wakefield in other markets to avoid confusion with the Taylor Wine Company of California.

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon
