Introduction

Meant to be a very low key casual Sunday dinner after a serious Saturday night's wine and food....... but we couldn't dial down on the wine and the food was excellent.

Flight 1 - Aperitif at Hong Kong Wine Vaults, Aberdeen (1 Note)

  • 2003 Kistler Chardonnay Vine Hill Vineyard 91 Points

    USA, California, Sonoma County, Russian River Valley

    Deep yellow burnished gold. Nose is just a hint of oxidisation followed by butterscotch and acacia honey. Palate is smoky butterscotch, good acidic counterpoint, charred barrels, sandalwood, incense, patchouli oil with tons of length and resonance. A big rich wine at this age. Time to drink up in my opinion unless you like your white wines very fat.

Flight 2 - Beef Carpaccio with Rocket & Parmesan (1 Note)

  • 2000 Domaine des Comtes Lafon Meursault 1er Cru Les Perrières 92 Points

    France, Burgundy, Côte de Beaune, Meursault 1er Cru

    Nice golden colour but still quite light. Nose is lovely melted salty butter, toasty oak. Palate is toasted lemons, lemon sherberts, super weight in the mouth, mouth coating, bracing ozone acidic freshness. Lots of oak Good length. I should like Mersault more than I do, especially when it is this good.

Flight 3 - Rib-Eye Steak (2 Notes)

  • 1997 E. Guigal Côte-Rôtie La Mouline 92 Points

    France, Rhône, Northern Rhône, Côte-Rôtie

    Bright, jeweled transparent ox blood colour. Nose is quite reticent: lovely depth and purity, blackcurrant jelly, damp woodlands. Palate is fresh, very accessible but very tightly wound, tons of black tar., wet boar's fur......really interesting. Cherries come out with the tar with more time in the glass. Resonant but still very tightly wound. That said, it is massively reverberant on the finish. Extremely harmoniously structured. A beautiful wine but it needs a lot more years to fully express itself.

  • 1988 Paul Jaboulet Aîné Hermitage La Chapelle 95 Points

    France, Rhône, Northern Rhône, Hermitage

    Semi transparent brightly jeweled lambs blood colour. Nose is gourgeously silkily seductive red fruits and red fruit compote, horse stables, wet gun dog fur. Palate is amazingly fresh and alive, vibrant, lots of red currents and blueberries. Quite tannic but gives it great structure. Feminine, not muscular. Very layered and light....like rose water. Lovely light but long resonance. Compelling. Mesmerizing. Absolutely at its peak drinking window. Just short of silence-creating.

Flight 4 - Italian Cheeses (1 Note)

  • 1990 Château Montrose 96 Points

    France, Bordeaux, Médoc, St. Estèphe

    Deep impenetrable crimson. Nose is lovely classic Bordeaux ...graphite, horse sweat, some high piano notes: the horse sweat is predominant... and lovely. Palate is absolutely gorgeous: light bodied but very complete ....just perfectly harmonious Bordeaux. Good resonance and reverberance for an extended time. A brilliant wine. To misquote the Rolling Stones, wild sweaty horses ... wouldn't drag me away. A league better than the 1990 Lynch Bages we drank last night. Fantastic.

A great evening........ Crown has really raised its game on the food side. As always, the service was excellent.
