Disgorged 13 December 2016. Pale salmon colour; pure and powerful, yeast and acacia, spices and tart lemon, excellent mineral energy, peach and apple, hint of nuttiness, floral lift, energetic mousse, very good length.
Medium orange with lilac reflections; complex and subtle nose, orange liqueur and green apple, fresh and spicy, good depth, like an ultra-refined Negroni; the palate is silky and seamless, dry but succulent, with a beautifully fresh and mineral core, and subtle bitters providing grip and structure; green apple on the finish first, then an array of subtle flavours, very good length. A rosé unlike any other I have ever tasted. Perfect now, but no fear before 2020.
A blend of Trousseau and Poulsard, no sulphur added, 10.5% ABV. Pale colour, strawberry and rosehip; complex nose starts out quite tertiary (like an old Burgundy) with nuts and forest floor, opens up to estery red berries, roses and violets, but also barnyardy aromas, good depth; fresh and juicy palate, supple, vibrant and mineral, silky and seamless, little or no tannin, relaxed, light body, hint of carbon dioxide; green apple and tangerine finish, good length. Exciting but drink soon.
