Muy decente selección de vinos por botella, especialmente en la parte internacional con muchas de las vacas sagradas de Francia a la que desgraciadamente no sigue la de por copas, pobre, conocida y nada atrayente. Salvo alguna joyita de Jerez.

VinArt (Fondillón de Sacristía de Salvador Poveda).
Algo único, la rareza elevada al cubo, lo excepcional. Una delicia que resistirá décadas.

El servicio mejora rápidamente cualquier inconveniente. Mucho oficio.
La cocina basada en el producto-producto, aunque mejorable en algún aspecto, siempre triunfa.

- Gamba roja de Dénia servida en frío (15/20) Producto-Producto.
- Ostras planas gallegas servidas crudas (14/20) El Concepto.
- Secreto Ibérico (12/20) con olor y sabor a lomo churruscado.
- Rabo de Toro con puré de patatas (6/20) A corrales.
- Carrillada con puré de calabaza (10/20) Compacta y seca.
- Tarta Tatín (11/20) Además de la masa de hojaldre, esta vez ha fallado la manzana.

  Served by the glass from a recently opened bottle.

• NV Gonzalez-Byass Jerez-Xérès-Sherry Tio Pepe Fino 'En Rama' 2016

  Served by the glass a little hot for August 22th in Alicante, I think.
  I love that oxidised note so umami, so much baking and algae.
  The complexity that reaches with almost sweet notes in the nose contrasted with refreshing notes quasi-salty in the mouth, is more than remarkable.
  What interests me the most is its immediacy and what, perhaps, is its short length. Always recommended.
  
  Servido por copas un poquito caliente para un 22 de agosto en Alicante.
  Me encanta esa nota oxida tuba tan umami, tan de bollería y de algas.
  La complejidad que alcanza con notas casi dulces en nariz contrastadas con refrescantes notas cuasi-Salinas en boca, es más que notable.
  Lo que más me atrae es su inmediatez y lo que menos, quizá, su escasa longitud. Siempre recomendado.

• NV Billecart-Salmon Champagne Grand Cru Brut Blanc de Blancs

  Floral slap on the nose. With depth and good taste. Elegantly spiced with notes of wild sap. Very mineral, with ash and toasted cereal as well. Tasty in the mouth, filling holes with a delicious aftertaste. A defect? Too short for my taste.
  Accompanied 2 razors claps and two red shrimp from Denia too much iron and to the point respectively.
  
  Bofetada floral en nariz. Con profundidad y buen gusto. Elegantemente especiado con notas a savia salvaje. Muy mineral, con cenizas y cereales tostados también. Sabroso en boca, rellenando huecos con un retrogusto delicioso. ¿Un defecto? Demasiado corto para mi gusto.
  Acompañó 2 navajas y dos gambas rojas de Denia demasiada plancha y en su punto respectivamente.

  By the glass from a new bottle afyer rejecting one open days ago that was very flat, how much I like this bar!
  Mineral, oyster shell and citrus notes. All well assembled and presented. Glyceric but easy on the palate. Do not look for complexity but just enjoy eating.

  Por copas de un botella nueva por rechazar una abierta hace días que estaba muy plana, ¡cuánto me quieren en este bar!
  Mineral, cáscara de ostra y notas cítricas. Todo bien ensamblado y presentado. Glicérico pero facilón al paladar. No busques complejidad si no disfrute con la comida.
  Ostras planas gallegas perfectas.

  Everything on its place, nothing offensive except an exultant youth that gets into the gums. If something, somewhat medicinal.
  In the mouth the opulence of the Merlot invades all very little space to the austerity of the CF.
  Wood everywhere. Push hard on the mouth with too much
  force. To enjoy it, you have to wait.
  
  Todo en su sitio, nada ofensivo salvo una exultante juventud que se mete en las encías. Si acaso, un tanto medicinal.
  En boca la opulencia de la Merlot invade todo muy poco espacio a la austeridad de la CF.
  Madera por todas partes. Empuja con fuerza en boca, con demasiada
  fuerza. Para disfrutar hay que esperar.

  Served by the glass. Soft, easy generic that helps swallow a too much salty bull's tail. Changed it for half of ordinary cheek. Still and again, bravo! It came a bit astringent and artificial on the nose.
  On the palate is just fair. Lots of cherries and iron and short as Austin Powers cock.
  
  Servido por copas. Suave, fácil genérico que ayuda a tragar un rabo de toro demasiado salado. Lo cambiaron por media ración de carrillada vulgar. Aún así y de nuevo ¡bravo! El vino un poco astringente y artificial en nariz.
  Al paladar es correcto sin más. Muy de cerecita y de hierro y corto como la polla de Torrente.

  We will always have Portugal ... Served the glass from a new bottle.
  The usual raisins and dates are wrapped in a mineral layer. Very attractive.
  In the mouth it is tremendously powerful, direct and very very long. It has the depth you want on demand.
  Pairing another interpretation of the tatin tart, to flaw of the puff pastry and this time also of the apple, we just will live with memories.
  
  Siempre nos quedará Portugal ... Servido por copas de una botella nueva .
  Las consabidas uvas pasas y dátiles pero envueltas está vez en una capa mineral. Muy atrayente.
  En boca es tremendamente potente, directo y muy muy largo. Tiene latida la profundidad que quieras exigirle.
  Maridó otra interpretación de la tarta tatin, a falla del hojaldre y está vez también de la manzana, viviremos de recuerdos.

  full of Crustaceans and roasted cereals notes.
  Slow pace on the palate. I want more!
  Picon cheese to accompany.

  Elaborated by Möet Chandon. Celebrating my sister's birthday.
  Aroma of white bread, quite simple and unsophisticated.
  Gigant bubbles. Very short with a rude bitter finish
  Not bad at all pairing a rabbit and vegetables paella.
  
  Botella elaborada por Möet Chandon. Para el cumple de mi hermana.
  Aroma a pan blanco, simplote y poco sofisticado.
  Burbujas gigantescas. Muy corto con un final rudo y amargo.
  No mal del todo acompañando una paella de conejo y verduras
