Surprisingly good. I've not been a huge fan of the reductive style of PYCM and the fat oak on the palate, but this bottle seems to straddle a happy medium, where neither the reduction nor oak overpower the wine. Great acidity; this shows the freshness of the vintage prominently and neither it, nor the fatness, overcome each other, leading to a nicely balanced wine.
Somewhat worrying colour that is darker than I would expect, but the palate allays any fears. This is brilliant chenin -- it is sappy, rich, and intense, with a concentration like no other dry chenin I've had. There is a pronounced browned apple tone here, but not in a bad way -- kind of like cooked green apples. Very intense and mineral, and a brilliant bottle of dry chenin. Huet really does make some killer stuff.

This is light on its feet, packed with minerality and fruit, and really exemplifies the house style. The vintage gives this an extra dose of ripeness, but it never overwhelms the wine.

Brilliantly light and elegant, with lovely acids and a crunchy red fruit profile. Not too complex, there is a rustic tannin backbone here. Light-handed, easily enjoyable Burgundy.
A little too heavy on the yuzu juice, giving this way more tartness than I would have liked, but otherwise, this is probably my second favourite session after the 005 one. Really refreshing and clean, but definitely one to enjoy with some food as the acid is screaming high.
IHOP French toast with that blackberry syrup. Tons of spice on the nose, but on the palate this is far more akin to a Schramm's melomel. Lots of acidity to give this brightness, but nonetheless, this is a heavy and potent mead; a small portion of which will go a very, very long way.
An unreleased batch made from blackberry and meadowfoam honey that suffered a stuck fermentation at about 12% abv. This is mindblowingly good. Easily the best mead I've ever tasted. The nose predominantly features notes of marshmallow, but then there is a slew of other complex elements, with a tropical pineapple note as well. The palate is sweet, but not cloyingly so. Incredibly floral and elegant, with a hit of acidity that freshens this up just right.
