Flight 1 - Oysters - rock and pacific (1 Note)

    Purchased and cellared since 2008.
    Light gold. Fine mousse.
    Lemon curd, white florals, mineral, sea spray, peach. Palate is fresh and has good intensity. The acid line is so well controlled. A delicious start to the evening.

    France, Burgundy, Côte de Nuits, Echezeaux Grand Cru

    PnP. Mid-garnet.
    Complex nose, with red berries, spice, and earthy forest floor notes. Stems, but not stemmy. Clean and layered, with a classy, medium bodied palate. Hints of dark spice. Fine, integrated tannins. There’s a richness here which belies the vintage. Delicious tonight.
