Tiny Lou's Four Course Wine Pairing

Introduction

A month ago, my wife and I attended a wonderful dinner in a private home that featured wines paired with food from Chef Jon with Tiny Lou's (see the Vik/Lasseter tasting story). We got to know Chef that night and hatched a plot to craft a coursed wine pairing at TL's (this is not something they normally do so we've really been looking forward to this!!).

It was decided that I would bring two wines and they would pick and provide two wines and chef would create the pairings around those four bottles. The only question chef asked when we arrived is "how hungry are you?!". Then it was off to the races - Chef and our server Paul absolutely killed it! The food and wines were delicious and chef visited our table several times to explain the pairings. The côte de boeuf (not on the menu) was amazing and we were humbled that chef did this especially for us.

WOTN was the 2019 Charles Heidsieck Coteaux Champenois Ambonnay Rouge but all of the wines were excellent

    Four course wine pairing with friends at Tiny Lou's in Atlanta. Paired côte de boeuf, fries and mushrooms. Wonderful pairing. I brought this wine and DD'd for about an hour prior to arriving at the restaurant. WOTN for me. The wine continued to evolve in the glass. Black fruits and soft tannins. Lovely!
