This is my first meeting with a Swiss Chasselas with a bit of maturity to it.

Day 1:
Apples. Old apples. Brown apples.
It was not allowed to come with us to the restaurant.

Day 2:
Nose is large, appley and beautiful.
In the mouth, this is an earthy-based experience. Everything is mellow, much in the style of the non-fruity full bodied Nihonshu that we also love. Even if umami is a little smaller in this one.

Day 3:
Absolutley pristine wine!
The apples are all gone. There's an oily minerality that is fantastic! The main taste of the wine is spectacular and I can't put my finger on the taste profile. There are also dried citrus fruits, white flowers and aromatic aromas towards kissing your wife just after she brushed her teeth. Acidity is M. This is complex, long, lingering and amazing!

I obviously drink too little Swiss wine...

Have one younger bottle of this (2015) that I'm gonna try to hold on to until 2025...

Our bottle is tired upon plop, but already three days later, it's a sport!

Day 1 - (not a detailed note because I switched to other wine after one sip) - tastes like a nama (unpasteurized) junmai sake - a lot of sweet yeastiness like sake lees, a hint of chestnut, and firm bitterness/umami. Slight tingling bubbles. Interesting but food paring is tricky, would work with strong japanese food like cod sperm sack (shirako) soaked in citrus-soy sauce or vinegared mackerel.
Day 2 - unripe pineapple on the nose, with the aftertaste of peppermint candy. Imprssion of nama-sake did not change.

Surprisingly tasty red blend, of Gamaret, Diolinoir, Pinot Noir, Merlot. Slightly meaty, good balance of acid and tannins, berry fruit a bit like a muted grenache but the blend is hard to pin down and I think it's the first I've had of the first two grapes.

Wonderful aroma of ripe fruit (pineapple?) and mineral heat. A hint of small carbonic acidity develops into delicious citrus and classy tender bitterness with a slightly salted finish. Truly delicious and beautiful as a great quick start to any meal.
