Silvery colour with greenish yellow.
A freshly-cut apricot initially on the nose and some light floral with sweet apple. Beautiful sweet aromas.
A little sweetness gives way to dry crisp apple. A little chalk. Aperitif in style, but the hint of sweetness makes it good with food too. Lovely.

Light-bodied - a light cherry-tinted raspberry.
Beautifully fragrant nose - raspberry and strawberry cordial with some vine leaf, perhaps a little cherry, rosewater and a trace of black pepper.
Raspberry and strawberry juice flavours with some mixed herbs, a spicy note and some very faint flavours of earth; an intensely red fruit finish. A really good English pinot.

Sweetish peach juice on the nose, with some floral
A lovely medium-dry taste with peaches, pears, elderflower and honeysuckle. very pleasant and good with food.

Felt unusually mature for a NV with a slightly oxidised feeling to some very wizened apples and lots of leesy notes that verged on something cheese-like. Good mousse, fine acid, it's a rather interesting sparkling wine, but not sure one I'd go back for.

A very happy accident indeed!

A small batch of Bacchus was left to ferment in old oak with the intention of blending with tank fermented Bacchus, but the yeast died off early!

This leaves something reminiscent of a Mosel Riesling that’s been dragged through a hedgerow; notes of Elderflower and honeysuckle, with not a hint of the 6 months it spent in oak.

Only 990 bottles made!

Salmon pink. Strawberry, cherry and pastry on the nose and palate. Fine mousse, medium minus body, and a good zing of medium plus aciditiy. Long finish.

The wine was called Carpe Diem. Its a blend of Rondo and other varieties. It had aromas of blackcurrants, granite hints and cherries. Its medium bodied rounded black fruits palate is in the same vein but with highish acidity. Ends a bit short. 11.5%. Not far from an 87. Good for an English red.
