11/9/2013 - michaelwiner Does not like this wine: 88 pointsDecanted for 1 hour. Never opened up. Good nose, but stayed very tight. Nothing special at all. Gave the bottle to wait staff and opened a bottle of Peter Michael Les Pavots, which was much better. Sorry I bought the Haut-Bailly. Maybe I will let it age another 5 years and try again. Reading some of the earlier reviews, I decided to open early and let them breath. I uncorked at 2:00pm, poured a couple ounces into my tasting glass, replaced the cork lightly and shook the bottle (yes, I shook it...a little trick I learned from a well-known winemaker). Uncorked again to let CO2 escape, then recorked and let sit in cellar for 3 hours. Decanted later...and wow, it was surprisingly good. Rich, mellow, long finish. Had the structure of much more expensive cabs. I'm going to try to buy more of the 2007 if I can find it. The obvious key: give it a few hours to breath and you will be rewarded. |
