Tried a small remaining amount, from yesterday's bottle (re-sealed with plastic closure and left out on counter). It had opened-up a bit more, with less tannins, but overall similar notes. Perhaps a bit more flabby. Would give the same rating: 78 (not done to prevent over-influencing score). (Without food and with good company.)

Quite nice and easy drinking, with typical red fruit notes. Some black fruit and notes of spice, perhaps a bit of caramel and coffee. Moderate body and a moderate finish. It's good and easy to like, but not very complex and a bit flabby. Still, it has a very good QPR.

Suspected to contain a substantive amount of histamines. (Consumed with good company, with various Indian foods.)

Surprisingly good for a cheap Kosher wine, especially one that is also Kosher for Passover and despite its also being Mevushal. Light, fizzy, fruity, and quite sweet. More a different beverage, than comparable to a wine, however. Easy to drink, especially at only 5.5% alcohol. A delightful alternative, in these circumstances!

Red fruit aroma and taste. Fairly pleasant, but without any complexity nor anything remarkable. Lacking in concentration and texture, with a short–moderate finish. (Consumed quickly and in a plastic cup. With excellent company.)

Again tasting from the same bottle, opened this past Tuesday. Now, four days later, it is noticeably worse. (This bottle from this past Tuesday afternoon, with around half left; was re-corked since initial consumption, having been open but left still save a few small pours, for around 3 hours; it was kept mostly in a 4 °C fridge; kept sealed, but no preservative gas ever used.)

Again, still opens up a bit more over time, with exposure to oxygen and warming back up to room temperature (in the same medium unstemmed glass as last tasting).

Quite muted and a touch bitter, in early tasting. Once it was swirled more, up to around 20 °C, and rested for another ~ 45 min, it started to develop more similar notes to prior tastings. Still not quite as good, but it seems to have still withstood this treatment okay. Finished what was left (a total of around another 2 glasses; second small glass portion taken after, from bottle having again been re-sealed and refrigerated). Upon finishing bottle, some light clumped sediment was present, but not too much.

I think tasting this 4 days out now and still improving in the glass indicates this wine still does actually have quite a bit of life left in it. Would be interesting to taste a new bottle in another few years.

Decided to also try the Tasting Note Assistant here (likely similar to other tastings, just a bit more muted):

The wine looks crimson colored. The legs are fast. There is light sediment in the bottle. It smells like blackberry, red currant, raisin, gooseberry, raspberry, black currant (cassis), blueberry, oak, vanilla, clove, game, botrytised, barnyard, brettanomyces and fig. It tastes like blackberry, red currant, black currant (cassis), fig, oak, stoniness, brettanomyces and barnyard. The body is medium. The wine has smooth (or juicy) texture. The wine finishes medium. The wine has medium acidity.

Again, opens up much more over time, with exposure to oxygen. Oddly, however, a quite muted and a bit bitter, right after tasting, after letting come up to around 15 °C, in a small glass, rested for 10 min thereafter and without any swirling. Once it was swirled more, up to around 20 °C, and rested for another ~ 30 min, it started to develop more similar notes to prior tastings. Still not quite as good, but it seems to have withstood this treatment okay so far.

This might suggest that this wine still has some time left, but perhaps not that much? Otherwise I would have said it still had a fair amount of life left, since some primary notes remain, though tertiary notes have developed a fair amount too.

Same notes as before (though a new bottle, from the same restaurant).

Again, opens up much more over time, with exposure to oxygen. The low–moderate tannins fade considerably after sitting or swirling (for 15–30 min).

From a newly opened bottled, with no faults. Poured normally in a medium-sized glass. Paired well with various food. (With good company.)

Not very good. Some fruity notes, with a modicum of spice. Quite tannic (medium–plus), without much else to offer. Medium acid, fairly low complexity, and a short finish. (One glass consumed over a couple hours, with various food, and good company.)

An excellent and interesting Bordeaux. It had complex notes of primary fruits (cherry, black fruits, dried fruit) transitioning into tertiary notes (pleasant barnyard, various oak, with complex spices, and some additional hard to discern flavour).

The harder to discern notes might be related to my detected Brett (barnyard) note. Personally, I think that this works nicely in this wine. Not surprising, given that the back Producer's note emphasizes minimal intervention, including native yeast cultures and no added sulphur.

The fruits became noticeably more prominent, over time, with further oxidation. Medium acid and low–medium tannin, with medium–plus body and complexity. Medium length, with quite a nice finish.

From a newly opened bottled, with no faults. Poured in two small pours in a medium-sized glass, to aerate further, over about 2 hours. Paired well with steak. (With good company.)

Exceptional value.

A very nice Cognac. While not compared to anything else, this was better than Courvoisier, to my recollection. Quite smooth, with little alcohol burn. Nicely aromatic and tastes as usually described (like other XOs, but without any excessive wood notes). The finish is quite long, but relatively weak for a spirit. (The 2024 300th Anniversary release blend. At a Rémy Martin tasting event, with some select pairing snacks.)

Quite nice indeed. Pleasant fruity aroma, with some complexity. Lots of black fruit notes, with some spice, and a modicum of enjoyable barnyard notes. Medium length, with a good finish. Medium-plus complexity and body. Low–medium tannins. Seemed quite ready to drink in my view, though could likely improve further. (Poured into a decanter, via Coravin, then into a large wine glass. Consumed after some further aeration, over a nice steak dinner, with company.)

Similar to before. Now finished the previously Coravined bottle (almost 7 months since initial tap; see prior review)—still did not seem to have had any negative impact. Improved somewhat over the course of an hour, as it aired and warmed. Also tasted after a leftover amount was left out in its glass, at room temperature for around 16 hours: it was fairly sour, with a touch of vinegar, lacking in body, and too flawed to drink. (First consumed with exceptional company and then alone the day after, as described. Rating suppressed—see other reviews; done to prevent my multiple notes on this bottle overly influencing reviews.)

Similar to before. Coravin does not seem to have had any negative impact. Could likely have benefited from decanting. Improved somewhat over the course of an hour, as it aired and warmed.
