All that air, shockingly enough, has not turned this into an acetaldehyde-laden mess of flaws. Very complex and layered, with figgy, raisiny fruit at the core, and layers of butterscotch, toffee, caramel, and more oxidative nutty notes adding depth. Certainly quite sweet, but also very well balanced with bright acids beneath that give it good lift. |

A really great match with chocolate cake. |
