Clay and limestone from high altitude vineyards.

20 years.

65 hl/ha.
Vinification
Traditional
Blending: Pinot Noir only, single vintage.
Prise de Mousse: 2nd fermentation inside the bottle (after addition of the "liqueur de tirage")
"Remuage" and disgorging: to eliminate 2nd fermentation sediments.
"Dosage": a sugar liquor is added, leaving 7g/l of residual sugar (Brut).
Ageing
18 months "sur lattes"
Serving Temperature
Between 6° & 8° C.
Situation
Yonne area, in the North of Burgundy.
Tasting and food pairings
Fresh and vivacious style. Showing powerful aromas of red fruit (raspberry, redcurrant) and freshness, fine bubbles and nice rosé colour.
Ideally for an aperitif but it will also match perfectly desserts made with red fruits and chocolate.
