  January 14, 2023 - Ripe melon, lemons, vanilla and grass notes. Drank over 2 days and day 2 was better as this continued to open up. I also enjoyed day 2 more as I did not refrigerate, but kept it at 55 degrees and the warmer temp coaxed out more of the aromas. This will benefit from 2-3 more years of rest, but very good now.
