The name comes from the natural springs in the area. And its actual winery, not just a custom crush label. Smells like Paso Cabernet, maybe a little bit darker. Better structure, still a little in the flavor profile but...

This is everything I would want in a $40 Chablis. Textbook in style. Very lean and weightless, chalky citrus, steely minerality. So good.

On the palate it has more volume than expected and is actually quite beautifully textured while having very nice acidity and a classic citrusy and leesy Aligoté profile, though not with any lactic notes to speak of. There is an airy quality to it for sure and it has this very effortless, unforced vibe. It is dry, savory and tangy and markedly refreshing. Overall, a pretty damn complete effort.

Clear, deep gold color.
Clean nose, at the beginning pronounced aromas of lemon and honeymelon. With opening honeymelon, almonds aromas take over.
Dry, medium acidity, medium alcohol, medium body. Medium flavour intensity of honey, almonds. Mid to long finish.
This is a very good wine.

The first thing you notice is the oak. After a little while in a decanter, the blackberries come forward. In the glass, however, it is still quite modest. Dark berries, more of a cherry character, the vanilla is there but thankfully somewhat restrained. Spontaneously, the 2012 vintage is gradually approaching its drinking window. But, honestly, I'm not so keen on this style anymore.

Purchased “blind” at auction, meaning I had no idea what I was getting myself into. This is an interesting wine, quite different from the usual wines I purchase because it is unfiltered and the taste is more biodynamic/probiotic than my usual wine selections. I thought I was getting “ordinary” chenin blanc so was surprised to see the bottle cap, and effervescent fizz when I opened the bottle. Active but not quite sparkling and definitely not still. Pale gold with some opacity which is unsurprising since it is unfiltered. The nose is a little closed, I get some flowers and sour mash. On the palate honeysuckle, juicy pear and apple with a touch of sweetness, and then a lot of fermentation flavors, yeasty bread, and a tart if abrupt finish. This was fun to try, thanksfully inexpensive but not my usual cup of tea. Glad I picked up some bottles, will be entertaining to discuss at future wine gatherings.

Popped and poured. Nose of raspberry, red cherry, underbrush and spice. Raspberry, cherry, spice and ripe tannins on the palate. Finishes with good persistence. Medium bodied. A good QPR. Served with mortadella and provolone sandwiches.

Comes from single vineyard planted between 1953-1980, farmed organically, fermented in steel, aged for 18 months in old Slavonian and Austrian oak. Medium garnet colour. Medium+ intensity aroma of cherries, dried rose petals, cigar box, sage, tar, nutty hints. Medium+ body, firm structure, bright and fresh with smoky cherry and chocolate flavours, medium+ acidity, chewy high and finely grained tannins.

A little bit saucy on the nose and nutty. Full bodied on the palate, a little fresh on the palate than the nose would lead you to believe.

2014 base, disgorged July 2020 after 5 years on the lees. This was better than my previous experiences with this wine (2011 base), showing a creamy, dairy quality perhaps from malolactic. But the palate feels locked up at present.
It's better after a few days sealed in the fridge, but this disgorgement needs more time in bottle for my preferences.

Orange colour. Nose is youthful, fruity and slightly herbal with notes of wild strawberries, peaches, dried roses, garrigue and some walnuts. Mouthfeel is medium bodied plus, fresh and fruity, with nice acidity and notes of peaches, wild strawberries, dried roses and garrigue.

As usual, a very good rosé from Clos Cibonne here. This is good now, but will be even better in 3-6 years.

Disgorged October 2018, this was an older release Zachys had recently for some reason. Classic muddled ripe strawberry, kinky spices, a hint of amarena cherry. Perhaps not the most concentrated version of this, but just love the unusual flavors this wine delivers.

Very delicate and elegant chard with lemon curd, apples, lemon cheesecake, oyster shells and chalky minerality. There is enough length but not enough depth and concentration to consider it totally classy for its provenance.

Almost unpleasant, heavy cherry jam (overripe and not very well aged Merlot) with some tannin structure there but far from balancing the wine. Maybe transport heat damage or not well developed in the cellar, although technically seemed ok. We did not finish the bottle.

Taste: leather, tobacco and cinnamon in the taste. Rather sweet. Round and quite soft. The tannins were more resolved than with my last bottle, but were still a bit drying, especially when drunk on its own at day four. Then also the alcohol was a bit burning. Already showing some nice complexity, but to my taste this wine now is only entering its drinking window. I will open my next bottle not before 2025 or 2026. Looking forward to that because this wine really seems promising. Potentially 90+.

Had to pop another bottle to see if this was consistent. Disgorged December 2021 and dosed at 2.5 g/L, diam closure. Opened this a day ahead of time and just had a taste. Pretty and pure, but fairly closed as expected.
On day 2 the nose is lovely but the palate still rather closed.
Finished the rest on day 8 and it's more giving but still holding a fair bit in reserve. Will hold my stash of this release at least a year before revisiting.

Retasted 5 days later and it's opened up nicely, and is moreish. Really delicious with a lovely fresh, spicy red fruit style. This is definitely in my narrow wheelhouse for rosé Champagne, and I could drink a lot of it. Based on the disgorgement date, I suspect this release is based on 2018; I also received an email offer for a more recent disgorgement which was described as 2019 base.

This is the second disgorgement I've tried of this wine I and I seem to consistently prefer it many days after opening, so I suppose I need to hold these for a few years.

Subtle oaky notes and some yellow fruit on the nose. Medium bodied, dry, very smooth, showing subtle yellow stone fruit with a nice creamy aspect carried by rather gentle acidity. A pleasant and easy drinking white.

Finally I have landed my white whale. This wine is impossible to find in Canada, but I happened on this one at an auction and paid way too much for it. Totally worth it though. Vibrant, fully integrated and virtually jumping out of the glass, the bottle didn't last long. Incredibly long finish. Having no point of comparison I can't say whether this is at or past peak but if you have one just drink it I say - live in the now!

This was a late edition to a fabulous night of wine and food at the Jonathan Club. This bottle was solid and has definite up reaching potential.

Had that great Dr. Crane nose and a great entry and mid palate, the finish was a bit short but will chalk it up to some significant cradle robbing, and just think this bottle needs some resting time in cellar!

Was significantly red fruit with a nice backbone of some black and blue to support, and was actually surprised that this bottling seemed to have far less oak influence than the standard (same year) bottling of the Salvestrin Dr. Crane.

I would suggest to let these rest while enjoying the standard Cranes.. think patience will definitely pay off in the future.

Atkin 95+ Tasting Event (Strauss Auction, Cape Town (and Jo'burg)): More clay-based soils with shale atop, the wine is filled with ripe black cherry, griotte aromas with some compote-like sweet fruit dusted in spices. The palate is textured with plenty of black cherry richness, giving a more voluptuous mouthfeel.
The grippy, compact tannins provide structure, and the wine is lively in acid, with a sour cherry and rhubarb note emphasising. There is also some smoky and toasty oak present. It is quite a four-square wine, well structured and balanced. It is showing well.

The entry is fabulously succulent, with a mineral/stony coolness and freshness that enhance its appeal. Ripe fruits, precise, mineral-edged acidity, great depth to it, and a long farewell—this is a cracker of a wine!

Atkin 95+ Tasting Event (Strauss Auction, Cape Town (and Jo'burg)): A somewhat restrained nose at first slowly opens to ripe citrus, Forelle pear, yellow plum and yellow cling peach with a whiff of cordite.
A rich entry the wine has a fabulous backbone of acidity. Some breadth in the mid-palate filled with oatmeal, smoked lemon and wedgesof freshly squeezed lemon juice and star fruit, reminiscent of the Adelaide Hills region. Quite clear cut notes the wine is captivating with a mineral quality and quite pure fruited. Long.

Atkin 95+ Tasting Event (Strauss Auction, Cape Town (and Jo'burg)): After an initial damp wood character, the nose reveals a combination of oak spice, light citrus, almond kernel and hazelnut with a hint of sawdust.
The palate is graceful with poise and elegance supported by a vibrant racy acidity. Stone fruit flavours such as washed peach and nectarine emerge from this intense wine as subtle hints of honeydew and honeysuckle add to the overall experience as the flavours unfold. Linear in shape the wine is long and focussed with a touch of creamed almonds on the finish.

Lifted aromas similar to previous wine but more darker fruits that lead to a richer entry with layers of darker chocolate and an array of berries, including blackcurrant. These elements are intensely woven together, creating a finely knit structure. An extremely smart wine that has depth, with more power and tannic drive (denser tannins) than the previous wine if a tad less sophisticated (but just a tad!).
