Restaurant Noma in Copenhagen

Introduction

These were the wines we had to the 7 course menu (and some starters) at Noma in Copenhagen. I have to say that the menu was fantastic and that the wine pairings were impeccable. Fantastic combinations where the wine picked up things in the food and vice versa. Best meal of my life!

Flight 1 (8 notes)

White
2009 Lilleø vin Arwen Denmark, Fyn, Lilleø
First one out to the "amis". Nice thin little wine, some acidity with hint of cassis. Well balanced and not that long taste.
Red
2009 Vini Viti Vinci Bourgogne-Epineuil France, Burgundy, Bourgogne-Epineuil
The nose had a hint of elderberry. It tasted nice with a hint of elderberry. There were some nice acid ala lime with touch of melon. Long and elegant finish. Young wine that still felt ready to drink. Mixed perfectly with the elderflowers in the food.
White
2008 Wittmann Westhofener Morstein Riesling Großes Gewächs Germany, Rheinhessen
To the hot oyster. Dry with some fruity sweetness. Taste of tangerines with a well rounded acidity. Long fresh almost sparkling taste.
White
2009 Mas Costefère Le Temps Fait Tout France, Languedoc Roussillon
To the asparagus. On the nose you could smell the oak and some kind of bush, most likely juniper. The taste had a nice fruity bitterness that was really odd but tasteful. Like a hint of pine needles or blood grape. The wine was very soothing with a hint of oak, nice round finish and a nice twang of acid in the end. Yet again superbly combined with the food.
White - Sparkling
2003 André Beaufort Champagne Grand Cru Brut (élaborée par Jacques Beaufort) France, Champagne, Champagne Grand Cru
To the eggs. On the nose it had a hint of liquor ala cognac. The taste was tight with a sharp lovely acid. The bubbles were really small. It also had a apple feel to it with a hint of medicin. Yes - that's correct, it had a good medicine tone. The finish was long and fantastic. An exquisite champagne.
Red
2009 Jean Foillard Morgon Côte du Py France, Burgundy, Beaujolais, Morgon
To the veal. Nose of pepper and red currant. Taste direct and peppery with more red currant. Some tannins but still a wine ready to drink. Finish long and refreshing, almost sparkling
White
2009 Rita & Rudolf Trossen Kinheimer Rosenberg Riesling Spätlese "Vom horn" Germany, Mosel Saar Ruwer
To the dessert. Shy on the nose (or the lateness of the evening). Mild sweetness ala English marmalade from tangerines. Nice finish with a rather enjoyable bitter end.
White - Sweet/Dessert
2009 Pithon-Paillé Coteaux du Layon Les 4 Vents France, Loire Valley, Anjou-Saumur, Coteaux du Layon
Final wine. Sweet wine. On the nose it had hints of creme caramel with a touch of lime. Nice sweetness. Tasted lightly bitter with hints of cider/beer. Nice finish.
