May 17, 2011 - Noma (Restaurant Noma in Copenhagen): To the eggs. On the nose it had a hint of liquor ala cognac. The taste was tight with a sharp lovely acid. The bubbles were really small. It also had a apple feel to it with a hint of medicin. Yes - that's correct, it had a good medicine tone. The finish was long and fantastic. An exquisite champagne.
