Introduction
Six of us gathered for a Wednesday evening at Tilia. Steven was so gracious as always to get us great table and oversee some splendid courses to pair with. The theme was WTDS. And they certainly did not S.
Flight 1 - Whites (3 notes)
White - Sparkling
N.V. Launois Pere et Fils Champagne Grand Cru Cuvée Reservé Blanc des Blancs Brut

Pale gold color. Very consistent with the previous experience with this bottling. The nose has sweet fruit, minerals, mild yeast. The palate has some RS, but the acidity balances it fairly well, tart pear, tart apple, minerals, chalk. Personally, I would find this even better with a lower dosage.

2008 Domaine William Fèvre Chablis Grand Cru Vaudésir

Pale green-gold color. PNP, drank 2 glasses over 90 minutes. This was really, really nice, green tree fruit on the nose, with purified oyster shell, sea air, and some citrus zest. The palate is extremely well balanced, elegant, there is an amazing tension to the focused minerality, lime, lime zest, lemon, saline, subtle grapefruit, apple, and a very long mineral infused finish. This got my attention. 93+ to 94pts.

Pretty, medium gold color. PNP, drank 2 glasses over 90 minutes. Great nose, complex, tangerine, citrus, melon, kiwi, mineral, wood spice. The palate has great full body and a lovely texture, very crisp and fresh, pink grapefruit, tropical fruit, excellent minerality, and a wonder long bright finish. Really good, thanks Lonny! 93(+)pts.

Deep salmon color. PNP, drank 1 glass over 30 minutes. Strawberry and cherry soda on the nose, sweet essence. This had a bit of sweet on the mid palate, cherry, strawberry fruit. Has good intensity and minerality to carry it through. Very solid.

2005 E. Guigal Côte-Rôtie Brune et Blonde

Very dark red color. PNP, drank 1 glass over 90 minutes. Nose has dark ripe fruits that emerge as this opens, blackberry, blackberry liqueur, herbs, savory. The palate is big and full, lots of glycerin, some heat shows, black fruits, blackberry, black plum, settles down with time in glass, meaty, savory, herbs and spice. 90+ to 91pts.

2001 Château de Beaucastel Châteauneuf-du-Pape

Dark red color. PNP, drank 2 pours over 90 minutes. Lovely CDP nose filled with violets, garrigue, Asian spices, raspberry, and blackberry. The palate is complex with full body and good concentration. There's tar, blackberry liqueur, raisin, black raspberry liqueur, kirsch, tart fruit, with somewhat firms tannins on the palate. Still drinks young.

Very dark red color, no bricking. PNP, drank 1+ glass over 60 minutes plus. This bottle was rocking, young and vibrant, no danger of fading. Great nose, earthy, perfumed, leather, ripe cassis, blueberries. The palate is very pretty, elegant, medium-full to full body, bright black fruits, cassis, blue fruits, berries, leather, damp earth, silky medium plus tannins, and a long finish. Best bottle to date. 93+pts to 94pts.

Medium gold color. PNP, drank 1 glass over 40 minutes. This was even better than the bottle we had at Brad's Sauternes dinner a couple months ago. Absolutely full and rich, unctuous, sweet, honeyed, apricot, pineapple, spiced, vanilla bean, vibrant, lush. Loved it, awesome. 94+(+) to 95pts.
