Expressive and exotic nose. Concentrated on the palate with succulent peach and ripe citrus but lacking acidity and tension. Drink now!

Flight 3 - Langoustine | Iberico Ham (2 notes)

White
2010 Domaine Ramonet Bâtard-Montrachet France, Burgundy, Côte de Beaune, Bâtard-Montrachet Grand Cru

White
2011 Pierre-Yves Colin-Morey Chevalier-Montrachet France, Burgundy, Côte de Beaune, Chevalier-Montrachet Grand Cru

A bit of petrol and reduction dominating the nose. The palate is painful intense with precise citrus, acidity and minerality on the balanced and long finish. Superb refinement and power without weight. Though it needs more time …

Red
2008 Domaine Anne Gros Clos Vougeot Le Grand Maupertui France, Burgundy, Côte de Nuits, Clos Vougeot Grand Cru
92 points
Elegant dark berry fruit and earth aromas followed with good balance and ripeness of flavors that possess more concentration than the Echézeaux we had few weeks ago, though ending a bit austere on the finish.

Flight 5 - Brill | Hollandaise | Truffle (1 note)

Red
1993 Domaine Marquis d'Angerville Volnay 1er Cru Clos des Ducs France, Burgundy, Côte de Beaune, Volnay 1er Cru

Stunning complexity on the nose with nuances of black fruit, spice and earth. Lots of tannin structure on the palate that almost overpowers the dark fruit, earth and some secondary flavors. Impressive firm style Volnay built to age.

Flight 6 - Black Angus Boeuf | Red Wine | Black Pepper (2 notes)

Red
1998 Claude Dugat Charmes-Chambertin France, Burgundy, Côte de Nuits, Charmes-Chambertin Grand Cru
94 points
Wonderfully dense and layered dark fruit and earth aromas. On the palate supple, sweet purple fruit. Different what one usually finds in Dugat’s wines !? This Charmes is approachable and charming.
Red
2009 Domaine Denis Bachelet Charmes-Chambertin Vieilles Vignes France, Burgundy, Côte de Nuits, Charmes-Chambertin Grand Cru
96 points
Wonderful fresh red fruit and earth aromas. On the palate more high quality pinot juice and earth notes with soft rounded tannins. An exceptional wine of finesse with refined length that lasts and lasts!

Flight 7 - Veal Sweetbread | Foie gras | Pumpkin (2 notes)

Red
2008 Giacomo Conterno Barolo Cascina Francia Italy, Piedmont, Langhe, Barolo
96 points
Dark, rich and concentrated nose, followed by deeper powerful flavors of tar, licorice and intense dark fruit. A fascinating Barolo to follow over the coming years and decades.
