Pale lemon. Lemony fruit, touch of biscuit, slightly off-dry, fine mousse, long. ****

Flight 2 - Salmon,Earl Grey, Dorset crab, clementine and kohlrabi (2 notes)

2007 Louis Carillon Puligny-Montrachet 1er Cru Les Combettes France, Burgundy, Côte de Beaune, Puligny-Montrachet 1er Cru
Pale/medium lemon. Nose initially discreet, opening to reveal creamy apple, medium bodied, lovely weight, some oaky breadth with a touch of sesame seed, very good length finish. Delicious. ****1/2
White
2007 Bonneau du Martray Corton-Charlemagne France, Burgundy, Côte de Beaune, Corton-Charlemagne Grand Cru
Pale lemon. Not overly aromatic, medium bodied, citrusy fruit, touch of mineral, crisp acidity, linear, long. Lovely, still young. ****(1/2)

Flight 3 - Pheasant, snail butter, chestnuts and black truffle (2 notes)

2002 Bouchard Père et Fils Corton-Le Corton France, Burgundy, Côte de Beaune, Corton Grand Cru
Classic, almost old-fashioned burgundy nose, lots of earth, dusty red fruit, touch of iron. Medium/full bodied, earthy red fruit, fresh acidity, grippy tannins, a touch sandy/rustic on the good length finish but a very good wine nonetheless. ***1/2

2002 Jean-Jacques Confuron Romanée St. Vivant France, Burgundy, Côte de Nuits, Romanée St. Vivant Grand Cru
Aromatic, pure, noble red fruit (strawberries), florals, medium bodied, soft, composed, elegant but with real depth and dimension, sweet, pure red fruit yet with a savoury edge, long finish. Lovely *****.

Flight 4 - Berkshire fallow deer, crushed turnip, sprout tops, juniper and elderberries (4 notes)

Md/dp garnet. Slightly reticent at first then showing deep, dark fruit, spice. Medium/full bodied, grippy yet fine tannins, dark fruit, earth, spice, excellent, particularly with the food.

2001 Domaine René Engel Vosne-Romanée 1er Cru Les Brulées France, Burgundy, Côte de Nuits, Vosne-Romanée 1er Cru
Aromatic, gamey yet with sweet, pure fruit, florals, medium bodied, soft tannins, gently savoury, vibrant acidity carries the very good length finish. Excellent, as ever. ****1/2

1996 Domaine Bruno Clavelier Vosne-Romanée 1er Cru Aux Brûlées Vieilles Vignes France, Burgundy, Côte de Nuits, Vosne-Romanée 1er Cru
A touch closed, earth, smoke, quite dark fruited, tannins resolved, spice, good but perhaps a touch flat on the finish. ***(?)

1976 Averys Bourgogne Cuvée Marechal Bonaparte France, Burgundy, Bourgogne
Medium/deep ruby/garnet, quite vibrant. Rich nose, touch of fruit cake, earth, spicy red fruit. Truffles. Medium/full bodied, a touch syrupy but at the same time with reasonable acidity, rich red fruits, spice, touch of dryness on the finish but very good and still full of life. ***

1977 Taylor (Fladgate) Porto Vintage Portugal, Douro, Porto
Composed, dark fruit, touch of chocolate, seamless. Lovely ****.
