4/25/24, 2:22 PM - My next will be popped at 8am, decant starting at noon, tasting every couple hours and then rebottling for dinner. Much easier when your're retired! The key is to get it the flavors to break free - out of the monolithic wall.
1/31/24, 8:45 AM - 2nd day was better integrated, more balanced, more intoxicating pleasure. I’ve found all SQN to be better on Day 2 with minor exception.
1/9/24, 8:11 PM - Top 5 depend on many factors including vintage, pricing. I'd say I buy and enjoy wines regularly from 15-20 vintners. My favs right now are Bevan, Abreu, Maybach, Vice Versa, Abreu, Myriad, Tor, Carter, Memento Mori, Realm, Vine Hill Ranch, Pride, Outpost, Rivers Marie, Switchback Ridge, Greer, and Schrader. I'm also big fan of Sine Qua Non and Fingers Crossed Syrah and Grenache down the coast. Note that a lot of the above make wines from Beckstoffer grapes (Crane especially)...Beckstoffer vineyards excite my senses and satifsy like few others.
12/17/23, 2:19 PM - I sensed hints of smoky clove, spices and it showed with a creamy like texture. I think all can be attributed to new oak barrels.
10/10/23, 10:28 AM - Consulted Hayes at MM: fires started 10 days after grapes harvested. Absence of fruit likely due to being corked. Will try another bottle in a few days.
10/2/23, 3:15 PM - Good to know. Is the 07 still bright? I just decanted a 13 last night and it was too high alcohol for 3.5 hours with nice acidity but little to no discernable fruit until 3 1/2 hours...then it was singing cherry pie. I'm enjoying the remaining half tonight. Have you received any Pinot or Chard offers from them since the 13 Pinot offer in 2022, the 13 Chard offer in 2021? And the '12 Pinot was offered in 2018. I love that they cellar the wine for us. Yet I see CT reviews for the 2014 pinot and I see the 2016 Pinot FS in Palm Desert CA. I just postd this on Bezerker. Thanks.
10/1/23, 4:25 PM - Nice review of luau pig. That’s a first on CT. We occasionally enjoy 300 lb luau pig here on Kauai prepared for visitors. Never eaten the head though! We like a big Napa Oakville cab with grippy tannins when serving fatty pig.
9/18/23, 8:36 AM - I’ve found 3 twins to be best with 60-90 minutes of air prior to pouring. Each vintage is different and this bottle was my first 2019 IIRC. Other vintages past were layed down longer and reflected more secondary flavors.
9/20/23, 7:30 AM - Your welcome. It’s an Albatross chick on my home golf course -Princeville, Kauai. Both parents take turns sitting on the egg and then watching over their baby for about 4-5 months before they fly off. They return to the same spot, within 10 yards, every year repeating the birth. We see about 20-30 if these annually. As adults they have a 6-7 foot wingspan. I’ve almost been clocked in the head by one flying too close several times while putting.

10/8/22, 1:29 PM - Given the Erin Brooks WA 98 rating I’d say you have a point about a long decant. One hour slow ox didn’t do anything significant. Will wait a year and open the next one 6 hours prior and taste along the way.
8/22/22, 5:26 PM - I typically open the bottle and stand it upright at 60 for several hours. I use a Vinglace bottle cooler for this most the time. Some will say removing the cork only oxygenates the wine at the top, yet it works wonders for me because I typically drink half the first night and by the time the second glass is poured it has been at least an hour with the bottle open. Then I pour the balance - exactly 375ml in a split bottle and recork and place in the frig. I pull that bottle from the frig 1-2 hours prior for the next day's meal and repeat - one glass with dinner and one about 60 minutes following dinner. I began doing this years ago when my wife stopped drinking bc of headaches. She now takes "sips" of my glass. Hope this helps!

3/18/21, 9:12 PM - You've posted only 17 times and only 1 CA Napa cab among these. I disagree about the equivalence of a rating for a Bordeaux First Growth like Mouton vs a CA First Growth (according to Parker). Right or wrong, I tend to compare wines to each other based on locale, appellation, and even classification. Hence one can have a 95pt Napa Spottswoode Cab that is nowhere near to or equal to a 95pt Mouton. If I were drinking them at the same time then I would rate them vs each other on that occasion. We do our own thing here and the scores largely reflect that. My 95 might be your 90. To each his own. Cheers mate!
3/7/21, 7:03 PM - Will have to try another soon since memory has faded; it was forgettable. Maybe it was an off bottle. The 90 is what I experienced after Day 2 after using Wine Preserve.
2/10/21, 4:45 PM - Tannins well integrated and non-primary. Acidity very balanced although it was just a bit sweeter than the 09. The 09 was fresher - more vibrant, but both were delicious and have at least a couple more years at the same level assuming ideal storage.
2/2/21, 6:37 PM - Posting a score for a corked bottle that could be the result of poor storage is poor judgement. Good grief.
12/26/20, 2:24 PM - I think it will get better albeit not by much over the next 2-3 years, based on other vintages I’ve drank of NG over the years. If you have only 1, I’d probably wait a year depending on what else you have to drink right now.
10/11/18, 1:40 PM - I drink close to 200 bottles of Cali cabs and Reds annually. The 07 Beringer ranks in the top 30 of bottles I have had this year. Tannins hardly noticeable, and the smell on nose, multi level taste mid-palate and finish were remarkable especially given the price point of this bottle. I can't see how this will get any better. I'd pick a nice occasion with the right meal and enjoy.

6/19/17, 12:59 AM - In it's prime now. Slow ox'd in bottle for an hour. Have had this twice in a year and both bottles were superbwith the most recent slightly better.
