June 30, 2023 - Nuts, yeast. brine. Quite a full on style compared to some, but very sippable. With olives, crisps and then tempura.

Paired rather nicely with traybake from [Ottolenghi](https://amp.theguardian.com/food/2020/oct/31/yotam-ottolenghi-recipes-autumn-veg-buttered-kohlrabi-yuca-fries) which was unexpected!
Day 2/3 - seems less intensely briny. Still salty, but now refreshing and mouthwatering with some apple notes. Just 👌🏻 with some prosciutto san Daniele or olives.
Seemed to oscillate between too briny/intense and beautifully refreshing depending on the day and what I was eating with it. -

December 20, 2022 - A complex profile, it’s fresh and clean but also develops notes of a damp cellar and germolene. Nonetheless, it’s bone dry, tangy and saline with green hazelnuts yet develops a hint of residual sweetness on a very long and fine finish. A multi-layered fino which really repaid aeration over 48 hours. CHP 89pts

Pronounced on the nose with apple, pear, bread, dough, bruised pear, bruised apple, green almond. Developing.
Pronounced and dry on the palate. Low acidity, medium alcohol, medium body, medium plus finish.
Drink now. Not suitable for aging or further aging.
