    November 23, 2016 - Hawaiian Escape; 11/19/2016-11/26/2016 (Kuki'o): Expressive nose of stalky and brambly red berry fruit. Dry soil and hay prominently featured on the bouquet. Palate has a lot of mature but sweet cranberry fruit. Fairly indicative of the Dujac style as this was pleasantly unrefined, but the palate was a touch thin and lacked the density of both Dujac and Charmes. Good and interesting drinking right now, but can't really see this improving. Still a good bottle of wine.

    January 13, 2014 - Mazoyères-Chambertin Dinner (Sepia - Chicago IL): Tasted single blind in Dujac vertical flight. Open ~3 hours before serving. Very forward and nicely perfumed, unmistakably Dujac. Red and black fruit with very good balance. I was surprised this was the 1997, a great success for the vintage. Better tonight than when last tasted 2 years ago.

    February 28, 2012 - Dujac Dinner with Jeremy Seysses (Charlie Trotter's - Chicago IL): Floral and alluring nose with cherry and spice with just a trace hint of intriguing funk. Palate also shows black fruit and modest spice but is very short and simple, also a bit flabby.

    January 7, 2012 - Saturday at Knightsbridge (Northbrook, IL): Wine tasting. Excellent perfumed aromas to start. Ripe red and black cherry aromas and flavors with moderate spice and fair degree of earthy flavor support. Fruit is clearly starting to fade and show some flabbiness, so I'd suggest it's time to drink these over the next few years.

As it breathes there are notes of beef stock, soy, ginger, musk and dried flowers. It has an enticing lacy texture with admirable density and sneaky muscle to the back-end. It is reasonably forward and utterly delicious now but I suspect will continue to develop then hold for many years as so many wines do from this Domaine.
