    June 28, 2013 - Dinner at L'Atelier Robuchon, Singapore (L'Atelier Robuchon, Resorts World Sentosa, Singapore): From the list at l'Atelier Robuchon, Singapore. I have never had a wine from this maker before, but served blind, this was very nice, especially with a delicious Dover Sole Meunier. It had a very developed, complex nose, with notes of mushrooms and damp earth, some chicken consomme, all lovely savoury, umami notes. With a bit of air, these pushed back a bit, ceding some way to citrus shades riding on a solid undertow of mineral. The palate drank a lot younger than the nose suggested though. There was a bright, fresh acid spine that laced its nicely round green apple and ripe lemon flavours with tingly, mouthwatering acidity. Served blind, there was no doubt that this could be anything but a Chablis, but it had so much youthful energy that I placed it as a 2002. On reflection though, it was clearly older, having matured and rounded into a lovely, creamy mouthfeel, with a nice fleshiness and little white-meat notes lending the wine a subtle complexity. It had a long, impressive finish too, with a creamily textured flow of preserved limes and sapid, saline mineral pricked with hints of spice that trailed away into the distance. Really nice - complex, enjoyable and great with our seafood. If well-stored, this should continue improving over the next few years too.
