    May 1, 2011 - This wine is finally starting to show it's best. I had almost given up on this wine but I was wrong it just needed many years of ageing to mature. The stems are finally becoming integrated and the complexity is definitely starting to show. A beautiful syrah that has just started to show how good it is. Just one bottle left that I'm going to hold for at least a couple more years.

    July 7, 2006 - Upon opening there was lots of salty, green olive (from the stems). This faded very quickly revealing very focused smokey cassis fruit and a strong floral element. Very tightly wound at this point. I missed the mineral and meaty characteristics of the other Copain syrahs, but I suspect that this will add complexity over time. I recommend waiting 3-4 years.
