June 10, 2017 - Purchased in 2012; drinking great, no sign of deterioration. Fresh, citrusy, lightly herbaceous aroma. Similar on the palate, along the lines of grapefruit juice and peel, fairly intensely saline, savory, with good tart acidity. Evocative of umeboshi. Tasty/moreish, and highly characterful. Good stuff!

October 25, 2014 - A bottle from the most recent release. Herbaceous and citrus aromas, and a dash of savory bread crust. Noticeable SB character, but nothing extreme. Hops- and grapefruit-like elements combine with the breadiness to evoke beer. On the palate, fresh grapefruit, some gingery spice, and a good dose of mouthwatering salinity. Dry, with good, balanced acidity. Not as out there as the prior release, but still characterful, and quite tasty.

March 21, 2014 - Grapefruit and pears with a touch of sweetness on the palate. Still, there is plenty of cut. And lots of that "natural wine funk" as well. Tasty, and will probably be more tasty once it's 80 degrees outside.

December 26, 2013 - I usually stay away from Sauvignon Blanc, but this one is different, and I gave a shot to this Pet Nat sparkling from Califormia.
Cloudy color, small delicate bubbles, the strong citrus and passion fruit made me fear the worst ( as sweet ) but it came out with a very dry finish, which made it quite pleasant. A bit girlish for my taste but nice discovery nonetheless.

August 10, 2013 - Citrus juice and rind, along the lines of Meyer lemon or sour orange, with great almost searing acidity, accented by saltiness and a hint of ginger. Refreshing mineral, saline finish. Best with some dregs in the glass, making it a cloudy yellow color. Went very well with pork haggis and neeps and tatties. A very different sort of bubbly, and delicious.
