August 27, 2023 - Dark fruit, blackberry, blueberry, cherry, vanilla soft, integrated tannins, alcohol well hidden, long finish, drinking very nicely

    May 22, 2023 - One note : PEPPER

Smooth cherry tartness 10 min. in but the longer it spent in glass the flatter it got.

Was medium smooth and juicy in its younger days.

Day 2 (vacu-vin) : More fruit. Dam delicious!
    The pepper is ever present.
It didnt go flat today but there's an unpleasant chemical note.

Definitely peaks given celery but there's nothing weird about it when young.

March 21, 2023 - Dark ruby red. Very fruity with a lingering sense of sweetness. Blackberry and vanilla scent. Fresh and juicy on the palate. Like a blackberry cobbler filling with vanilla whip cream and a drizzle of honey. (This review is making me hungry.) A little bit of cocoa on the medium finish. Light tannin—could’ve used more. A bit hot.

January 3, 2023 - Drinking at its peak, if not a touch beyond - bold, brambly nose of blackberry, brown sugar, baked earth, smoked meat, and black pepper. Silky, rich palate also revealed potting soil and fine tannins. High ABV and full bodied with moderate acid. Fabulous with Kona coffee rubbed NY strip. Drink soon - started to fade after 2 hours in the glass, but delicious while it lasts!
