January 2, 2021 - PNP with a ginger-honey-lemon pork loin cooked sous vide. Tawny color. Aromas of cranberry, dried strawberry, mushroom, leather, pepper and a hint of truffle. Medium-bodied, silky texture, rounded tannins. Elegant and harmonious, in an absolute perfect drinking window. Dried red fruit and a smoky sweet finish.
