January 24, 2018 - Penetrating nose of matchstick reduction, white flower, and grilled nuts. Elegant and well-delineated, with an interesting profile devoid of overt fruit flavors, but offering plenty of floral and nut flavors hidden behind the still-heavy reduction.

May 28, 2017 - Reductive quality that showed in previous bottles (over a year ago) has diminished to just a hint, revealing luscious lemon curd and lime notes with PYC's laser-sharp focus, acidity and minerality framing everything with grace. Absolutely delicious.

September 20, 2015 - Light gold. Very nutty, almonds, chestnuts, walnuts, pistachios, pine nuts and some nut / canola or peanut oil. Little minerality. Some chemical aromas of white rubber. maybe a bit of sulphur and smoky matches. Went great with waffles...
