    July 18, 2021 - Champagne that has held well over the past 16 years, but is rounding the bend into old age. The cork comes out with just a tiny bit of gas escaping, showing that the carbonation has dissipated a bit. It pours a deep coppery gold. The nose is very rich, almost like an almond cake baking in the oven and filling the kitchen with nice baking smells.

    The wine is thick and rich in the mouth, with a fine mousse that is clearly on its way out. I couldn't help but be impressed by the depth of flavor here. My first impression is unfiltered apple cider; I had a friend with an apple press in Vermont, and he'd make this unpasteurized cider that was so raw that there were like little pieces of bugs floating in it. Best cider I've ever had btw. This wine has an element of that, which is both good (bc it is undeniably tasty), and not so good (bc these aren't usually the flavors you go for in Champagne). Not sure of the dosage, but it feels a touch overly sweet. And although the cider flavors were kind of cool, they very much dominate the experience. There is some yeastiness, but that's about it. This is not a subtle drink.
