    December 17, 2020 - A Small 2005 Bordeaux Horizontal: [Tasted Blind] This pours fairly light in the glass medium minus bricking. The nose is complex and mature showing leather, black olive, red currant, cedar, dark cherry, just a little celery seed, and a touch of tomato leaf. The palate is still quite structured with high woody tannin, and medium minus acidity. I quite love the nose but the palate is quite tight still I can’t help but wonder if there is bit too much oak derived tannin. With the sternness, tannin and light green notes I wondered if this is Pauillac. On reveal I was surprised to see this was Chateau Dominique as I thought this wine would have been modern, but evidently was quite traditional.

    July 5, 2019 - Great wine, still young and will continue to improve for many years judging by their 1982 and 1990 vintages. It’s already a beauty: complex with aromas of plumb and dry fruits and flavors of prune, blackberry, acai, and a hint of black olive at the finish. Strong somewhat tart structure, but not out of balance. It has a good potential to further improve. I love this Chateau (with exception of La Dominique 2000, which was a total bummer)

    April 26, 2019 - Decanted for 2 hours. Nice bouquet of cherries, plums, truffles, earth, vanilla, and a hint of mint. Well-built structure with integrated tannins, good balance, medium body, & medium finish. Flavors up-front were fruit forward, with cherry & blackberry; then earth & minor licorice on mid-palate, finishing into currant, vanilla, and a hint of mint. I think the fruit and tannins will begin to fade in the next 1 or 2 years, certainly 3 years - I held my 2000 too long, to the max drink date, and I missed it's peak potential. I think I caught this vintage near its peak performance. I greatly enjoyed this wine with my pork chop dinner, and after dinner. On to the next vintage.....
