April 12, 2018 - Closing Dinner at Acadia (Acadia Restaurant (Chicago)): First wine of the night, paired with a sous-vide carrot dish. I'm just not that into Gewurztraminer - nice bouquet and fruity and floral initially, but there is an awkward flat note in the middle where the wine just tastes like water (both with and without food). End shows some acidity and minerality. Quote of the night about this wine was my friend who said "I could drink a gallon of this like water - is this wine?".
