  April 9, 2015 - An older NV bottling estimated to be from the late 1970's. AFAIK Paillard hasn't made Champagnes labeled as Carte d'Or for quite a while.
  
  Deep, developed lemony yellow color. Obviously quite mature and pretty concentrated nose with aromas of smoked wood, wildhoney and marzipan with some waxy notes and a hint of raw meat. Dry and developed on the palate with remarkable depth and complexity. Layered, aged flavors of spice, honey, umami, crushed nuts and almond paste, smoke, some chalky minerality, a little honey and beeswax, a hint of baked apple and touch of cantaloupe and exotic yellow fruits. There is a lovely, dark-toned streak of caramel underneath. The wine feels quite old, but still very much alive with bright acidity and fine, persistent mousse. The waxy finish is really long and complex with mouth-cleansing minerality, crisp citrus fruit notes and layered mature fruit notes of baked apples, apple purée and dried yellow fruits.
  
  A really terrific, well-preserved example of 40-yo Champagne. Most likely this bottling is an entry-level NV or a mid-tier bubbly, but still it has survived all these years and still doesn't show any signs of tiring. Most likely the wine has hit its plateau of maturity years ago, but I can imagine it will keep years, if not a decade, more. Thoroughly enjoyable stuff, really.
