    "Perfect for drinking now, this rare find has solid juicy fruit and seductive nuances that show just how well Merlot can age. Freshly ground coffee, dried plum, black olive olives, and cured meat permeate the expressive nose. And on the soft, velvety palate, dark plummy fruit blends with flavors of bacon fat, mountain herbs and toasty oak. Plus there is another dimension that aging has imparted to this wine that's reminiscent of sweet wild fennel and chanterelle mushrooms. The satisfying finish is bright, delicate and dry, ending with a distinctly delicious salumi character. This cave-aged Merlot is a superb food wine and would go well with a myriad of dishes but especially with charcuterie, roasted curried veggies (like cauliflower), grilled mushrooms or red wine braised chicken."
