May 20, 2018 - Wild ferment not to my liking. Interesting though.

January 2, 2018 - Clear medium ruby colour. Nose is clean and medium. Bright cherries, perfumed herbs and spices, bell pepper, violets, some savory notes. Dry with bright high acidity. Gentle soft tannins. Body is medium. Flavour is medium and palate has cherries, strawberries, meat, pepper. Finish is medium. Nice to drink on its own given its complex flavours but bright acidity will go well with tomato-based food.
