    August 23, 2022 - This has a floral/ fruit nose, medium red , good acidity.
    The wine has an initial sweetness that transcends into a blend of dark fruit flavours primarily cherry with a slight bitterness from the tannins. Length is moderate . Overall appeal is good . This was served cold so waiting to see what changes as the bottle gets to room temperature . Much better with time . Softer , slightly fatter on the palate. Not yet at it’s yummy stage … needs some time.
    I believe the 10 year mark will show if it is a GC quality wine.

    November 12, 2021 - Friday night in November. Paired this wine with a Rabbit (first Rabbit of the 2021 hunting season with the help of a beagle named Zoey) De-boned stuffed saddle, rabbit meatballs and de-boned rabbit legs all served with dijon mustard sauce. The wine was really fantastic. Much more so than my previous trial as previously noted. Loved it. We just commented that at this price point for a Grand Cru we should buy a couple more cases.

    February 13, 2021 - Opened a day ago had a half glass of wine decided to vacuum the bottle and let it sit for a day. The first taste was predominantly very ripe dark fruits with a strong tannic spine.
    Second day the wine mellowed out and the fruit and tannins where better balanced. This had a slight bitter taste from the tannins on the back of the palate but was a great tasting wine. Glad I opened a bottle but this wine needs more time and will be exceptional in a few years. An excellent Corton.
