    December 25, 2012 - Easy drinking and good food wine. I kind of feel like this may be fading a bit, so will drink my last bottle soon.

    September 23, 2010 - Deep ruby color. Well, this one has really begun to fall apart. The alcohol is pretty overpowering now, aromas of coffee and some dark fruit and a lot of heat on the palate. Too bad ... Update: this is very surprising. After three days in a .375 in the cellar the remainder of this bottle is MUCH improved. Aromas of black tea, dry rubbing spice, strawberry gumdrops and violets. Good presence on the palate. This goes from being around an 85 point wine to 89 pts. Wow ...

    (OUSTAL Blanc Minervois) Oustal Blanc Dear Friends, Like the Tribouley Orchis, this wine defies what can take place in the Languedoc-Roussillon and it is a wine that has a chance to cellar for years. If you are looking for the finest wines at any price, this is at a level with the best wines not only in France but in the world. I’m sure some of you will find this to be superior in quality to some of the very best CdP’s at 2-3 times the price (although this wine has an exotic streak of rosemary and lavender that is unique to its character and is not often found in CdP). While it is tempting to compare this to wine in the Southern Rhone, the Oustal Blanc should be left to stand on its own as an expression that is quasi-revolutionary for the genre - like the Valletta from this morning, this wine is EXTREMELY LIMITED and worth a splurge: VERY HIGHLY RECOMMENDED for ground-breaking quality in a region that has tread in the shadows of mediocrity for too long ONE SHIPMENT ONLY with perfect provenance: 2004 L’Oustal Blanc Minervois (this is a red wine - this is not the Rouge or Naicy, this is the “Minervois”) Thank you, Jon Rimmerman Garagiste Seattle, WA SOFR8980
