    The nose led me to believe that it was Italian. It had a cheesy aroma at the beginning and a little bit of brett. It was very interesting. Medium plus mouthfeel, has the presence and weight of a red wine. Yellow apple with an edge. Nice acidity with a combination of mineral and citrus.

    January 22, 2024 - Drank with friends, no formal note. This is drinking very nicely and showing promise for a long life. Full bodied, round and bright acid to go with some very real alcohol. Big mouthfeel, very smooth. Slightly buttered tinge to the nose and palate. No rush.

    December 13, 2022 - Drank for Anniversary dinner with Alex at Xiquet.

    Fantastic wine. Opened up very Cheesy, funky but developed into a ripe fruit character with lots of mineral character. First time ever having the Pecorino and definitely a fun wine to try.

    July 12, 2022 - Medium gold color
    Medium plus aromas of primarily apple cider at first which eventually partially subsided to reveal dry herbal qualities/ tarragon and wooly aromas
    Medium plus palate of apple skins and lemon with distinct bitter quality - no mention of this in wine notes but I get some extended skin contact?
    Medium plus acidity and moderate phenolic bitterness as noted
    Medium plus alcohol and lengthy finish, primarily driven by this bitterness
    Very unique wine which Im certain will have some polarizing opinions - I personally am right in the middle - Quite enjoyable but Im not desiring more of this as I find the bitter quality dominating at least at this time
    Drink now as I really have no idea regarding aging ability and Im not finding much in the way of primary fruit presently
